Winter Massaged Kale Bowl

This is officially my first post using my new Canon Rebel 🙂

Up until this point, I’ve been using my iPhone as a camera for all my Instagram and blog photos.  Crazy, right? It definitely took a lot of practice and time photo editing, but I made it work because I wasn’t ready to invest in a good camera yet. Buying a good camera is definitely a big step and not something I just wanted to jump into. Plus, I’m a pretty frugal person, so splurging on something for myself is not something I take lightly.

My blog has been around for about 4 months now and it’s been so fun seeing the changes and growth I’ve made since my first post back in October. But as much as I liked the quality of my photos, I knew that I could do much better if I only had the right equipment to help me. And then I started coming up with more reasons why I needed to make the investment… travel photography, family photos, a new hobby… basically, I convinced myself it was time.

So here it is, my first DSLR—- a Canon Rebel! I’m definitely still in the initial learning phase, so bear with me and my photography as I learn all the new tricks to this awesome camera. From what I’ve played with so far, I absolutely love it! I can’t wait to go on my next trip and see how it does outdoors with more natural scenery. For now, I’ll just play around with some food photos and see where my creative side takes me.

Winter Massaged Kale Bowl

This bowl is inspired by Angela Lindon’s Warm & Roasted Winter Salad Bowl from Oh She Glows. I have been a huge fan of Angela since I first started reading blogs back in college and adore all her recipes (and her book!). I tweaked her original recipe quite a bit to fit what I had in my kitchen, but it turned out absolutely delicious and super nutritious. This might actually be my favorite salad I’ve posted on this blog because the flavors just meld perfectly together. Plus, you have such a range of textures that make this salad filling and anything but boring. Did you notice the massaged kale too? Yeah, I’m obsessed now.

You can easily adapt this recipe, just like I did, with whatever veggies, grains, and seeds you keep in your pantry and fridge. The dressing is my go-to salad dressing and I almost always keep a mason jar full of it in my fridge. Winter Massaged Kale Bowl {vegan}

yield:  2 servings         total time: 30-35 minutes

inspired by oh she glow‘s warm and roasted winter salad bowl


4 large kale leaves, chopped into bite sized pieces
1 tbsp olive oil
pinch of salt and pepper

2 small potatoes, cubed
1 tsp olive oil
salt and pepper

10-12 thin green beans, steamed
¼ cup sunflower seeds
¾ cup of cooked grain of choice (I used whole wheat Israeli couscous)

red wine vinaigrette (see quinoa arugula salad with roasted sweet potato)


Preheat the oven to 400 degrees. Mix cubed potatoes with 1 tsp of olive oil and a pinch of salt and pepper. Roast for 20-25 minutes, or until potatoes are crisp on the outside and tender on the inside.

In the meantime, put kale leaves, 1 tbsp of olive oil, and a pinch of salt and pepper into a large bowl. Begin to massage the kale with your hands for at least 5 minutes, or until kale is tender.

Split the massaged kale into 2 bowls. Top kale bowls evenly with steamed green beans, sunflower seeds, roasted potatoes, grain of choice, and red wine vinaigrette. Mix together and serve!
