Today’s post feels slightly odd for me because— strangely enough— I’ve never really liked mimosas.
I’m probably the only person who’s walked this earth to say that, but that OJ champagne combo was just never my thing. Maybe it was a little too sweet, or a little too tart, it was never struck my fancy.
Bloody Mary’s on the other hand. Now that’s a brunch cocktail I can get on board with! But we’re not making Bloody Mary’s today. We’re making mimosas. And the whole world has turned upside down!
So what’s one way you can amp up your typical mimosa to make it fresh and light and flavorful??? Why you substitute fresh squeezed watermelon juice instead of orange juice of course! Plus a little mint and a squeeze of a juicy lime and you’ve got yourself a winner.
And that’s exactly what I did.
It’s super simple, made in about 10 minutes, and one of the freshest summer cocktails I’ve ever tasted! Well, when watermelon is involved, how can it NOT be?
These cocktails are totally perfect for a Sunday brunch, especially this Sunday because it’s 4th of July weekend! Nate and I will be at the lake for the long weekend, and I can totally picture us sipping these all
day morning long (while lounging by the water of course 😉 ). Thanks to that refreshing watermelon, these babies fit almost any party or activity you’ve got planned for the weekend. So go get that watermelon and let’s get boozin’!
