Happy long weekend friends! Isn’t it the BEST feeling waking up on a Sunday morning, knowing it’s kinda really still a Saturday?? I swear, I live for weekends like these.
We took advantage of this extra down time to simply relax and recharge. This was the first weekend since – well – the middle of December that we weren’t traveling. And as much as you all know I adore traveling, I love those homebody weekends just as much where we hunker down and rarely leave the house.
Weekends like these also inspire me in the breakfast department. During the workweek, our mornings are so early and busy, I literally make the same thing every day. It’s yummy and quick and it gets the job done. But on these long, lazy weekends, I feel so much more inspired to change things up. Not necessarily complicate things, but just jump a little out of the box.
So that’s exactly what we’re doing here today with this One Pan Veggie Potato Breakfast Hash!
Like I said before, changing things up doesn’t necessarily mean complicating things. And I am ALL about one pan dishes these days – because laziness – and that remains true especially at breakfast time.
This One Pan Veggie Potato Breakfast Hash is simple, hands off, and such a delicious (and healthy) way to start your morning. Crispy roasted russet potatoes, a warm vegetable medley, luscious eggs, creamy avocado – it’s like all my favorite things tossed onto one pan!
The total all-star of this dish is definitely those crispy russet potatoes. As most of you know, I am a HUGE potato fanatic. I use them all the time in my cooking because they’re so darn convenient (I always have some on hand) and they are a culinary canvas of unlimited possibilities. I use them on salads, in soups, in tacos, as a side dish, you name it!

Ok, so here’s the deal. We’ve got three simple steps:
- Just chop up your potatoes and veggies, and toss them in a little olive oil, salt, and pepper on a large baking sheet.
- Bake for 25 minutes, then crack as many eggs as you desire on top.
- Bake for another 7-8 minutes, then remove, cover with diced avocado, and DIG IN!
Told ya it was easy!! And it makes enough to feed your family, house guests, or just to have some leftover snacks throughout the day for hungry husbands.
