You guys. I am SO excited about today’s recipe because I’m finally sharing one of my family’s favorite summer snacks!
Sorry I’ve been holding out on you guys for, ohhh, almost three years now, but I promise it’s totally worth the wait 😉
Avocado. Cilantro. Lime. Dip.
Who doesn’t love every single word in that title?!
I honestly can’t even remember how this recipe made its way into my family’s kitchen. It definitely happened way back when I was in college, when my interest in healthy cooking was just beginning to take hold and I lived for experimenting in the kitchen.
During that time, I also had (and still do have) an obsession with cilantro and avocado. Like I ate them ALL THE TIME. But, really, who doesn’t? And somehow, between these food obsessions and my crazy healthy kitchen experiments, this recipe was born!
The best part— all you need is 4 ingredients (yes, FOUR) and a delicious dipping vessel. And in this case, I chose these addicting Brenton Artisanal Sweet Potato and Ancient Grains Crackers. But we’ll get to those babies in a minute.
First, let’s talk this dip.
Chickpeas. Cilantro. Avocado. Lime. That’s it!! Well, and a generous pinch of salt and pepper. But seriously, just throw those 4 ingredients into a food processor (or high-speed blender), let it run, then dip away! It’s couldn’t be easier— or more addicting.
My sisters and I typically polish off a batch of this stuff in a matter of minutes. It’s honestly that good!
Now, onto the dipping vessel— these delicious Brenton Artisanal Sweet Potato and Ancient Grains Crackers!
I love these crackers. I could probably eat a box of these babies all by themselves, but they also taste AMAZING with this dip. Breton has a variety of flavors and textures too, so there are so many possibilities from quick snacks, like this one, to appetizers or even simple crusts.
I love the heartiness of these crackers and the amazing sweet potato flavor that goes so well with this dip. I swear, sweet potato, avocado, and cilantro were MEANT to be together.
