Hi friends! Whew, what a whirlwind week it’s been, but I’m back again today with this delicious, protein-packed grain salad that I KNOW you’re going to just love. 

But before we get to that, can we first talk about the fact that we’re leaving for our honeymoon TOMORROW!?! I cannot believe this day is finally here! Tomorrow evening we’ll be on a red-eye to London, off for two weeks of gallivanting (and eating our way) through London, Paris, Cannes, and Nice. Ok, now onto the star of this post, this Grilled Avocado + Tomato Grain Salad!

Have you ever heard of Village Harvest before? They were brand new to me before this recipe, but I am SO in love with their products now!  They make a variety of blends of rice, grains, and lentils that work so beautifully together and are packed with nutrient-rich whole ingredients.

And I just love Village Harvest’s focus on sustainability for both our planet and local communities. They donate 1% of their profits to programs that support local farmers and communities from which they source their products, and 1% of their employees time to charitable organizations and sustainability efforts! How cool?!

Right now, they have three different varieties of blends: Organic Antioxidant Blend, Organic Ancient Grain Blend, and Organic Protein Blend. You can currently shop for their products on the Village Harvest Online Shop, but you can also fill out a product request form to have them available at your local grocery store.

I used the Organic Protein Blend for this recipe and it was outstanding! Packed with brown jasmine rice, lentils, and red quinoa, it was such a wonderful texture and, obviously, loaded with protein.

Now that we’ve got the grains down, let’s talk about these toppings!

I’ve been craving all that fresh, summer produce lately, so I incorporated some of my favorites into this salad. I started with some grilled avocado and tomatoes, obvs.

Ummm have you ever grilled your avocados before?? It is a game changer.

And, like, seriously easy. I just grilled them on my grill pan at home with a little bit of olive oil, but I’m sure they would taste even better on a charcoal grill— so smoky and tender. And grilled tomatoes, well they are just pure magic. I’m sure you already knew that. So juicy and vibrant, and a perfect compliment to these nutty grains.

I topped the whole salad off with lots of fresh cilantro (because…. cilantro) and a zesty cilantro lime vinaigrette that brightens up the whole dish.

And we can’t forget the pickled red onions! I made my own at home (see the recipe link below), but you can also use store bought ones if you’re short on time. They add such a beautiful, vibrant zing to the dish, melding all the flavors into one perfect zesty bite.

This salad would certainly make an amazing side dish at your next picnic or barbecue, but we tend to eat it as a protein-packed lunch or quick weeknight dinner. Hope you guys enjoy!

 

Grilled Avocado + Tomato Grain Salad {vegan, gluten free}

Grilled Avocado + Tomato Grain Salad

Ingredients

  • 1 cup Village Harvest Organic Protein Blend (or 1/2 cup green lentils + 1/2 cup quinoa or brown rice)
  • 2 1/4 cups water
  • 1 avocado
  • 1 tablespoon extra virgin olive oil
  • 6-8 small tomatoes, halved
  • 1/4 chopped cilantro leaves
  • 1/4 cup picked red onions*

for the cilantro lime vinaigrette

  • 2 tablespoons apple cider vinegar
  • juice of 1 lime
  • 1 shallot
  • salt and pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 1/4 cup cilantro leaves

*I used A Farm Girl Dabbles recipe for Quick Pickled Red Onions

Directions

Step 1
If you want to make your own pickled red onions, I suggest making them at least 2 hours before you are ready to make this recipe. If you're using store bought ones, or you already have some made, you're ready to go!
Step 2
Bring 2 1/4 cups of water and 1 cup of the Village Harvest Protein Blend (or 1/2 cup green lentils + 1/2 cup quinoa or brown rice) to a boil. Turn down to a simmer and cover for 20-25 minutes. Remove from heat and let sit for a few minutes. Stir to fluff up the grains.
Step 3
While the quinoa is cooking heat up your grill pan or grill and brush with extra virgin olive oil. Slice your avocado in half and remove the flesh from the skin. Brush the bottom of each avocado half with olive oil, then place flat side down on the hot grill pan or grill. Press down a bit with your fingers to get those good grill marks. Let them cook for 5-7 minutes, or until grill marks are dark.
Step 4
While avocados are grilling, place tomato halves flat side down on the same grill pan with the avocado halves. They take about the same amount of time to cook as the avocado. Remove both when grill lines are evident and tomatoes are bubbly. Set aside.
Step 5
Place all the cilantro lime vinaigrette ingredients into a high speed blender: cilantro, lime juice, apple cider vinegar, olive oil, shallot, and salt and pepper. Blend until all the ingredients are combined and the cilantro is well chopped.
Step 6
Time to assemble! Start by pouring the cooked grains into a large bowl. Slice your avocados (or leave them whole for presentation) and place on the grains. Add on your grilled tomatoes and picked red onion. Pour on the cilantro lime vinaigrette and stir to coat. Dig in!
