Happy first day of SPRING!
I feel like Mother Nature has been very confused this year when it comes to our changing seasons. Have you noticed it too? Or maybe it’s just us down here in the south, spoiled with our laughable winters and ever changing temps. We’ve essentially gone from big snow storm to 80 degree weather, then back to snow and hail, and finally back to 70s again— all in the past 3 months! I can’t keep up! And neither can my wardrobe.
But, alas, spring is here. And hopefully for good this time!
So in honor of the changing season, I’m bringing you this light and refreshing cocktail that features that outgoing winter citrus we love so much and the incoming fresh spring produce. And who knew that cucumber and grapefruit would pair so perfectly together?!?
I had so much fun creating and photographing this drink over the weekend with one of my good friends (who is actually hoping to start her own blog soon!) and I had a breakthrough realization in my blogging career. I realized how much easier it is food styling and photographing with two sets of hands instead of one. Like ridiculously easier!
Have you ever tried to do a pour shot all by yourself?? Let me tell you, it’s almost physically impossible slash one of the most hilarious things to watch. Picture me trying to hold my camera, while standing on my coffee table, while trying to angle a cup in a perfect direction, while trying to get the sharpest photo— it’s a straight up comedy routine! I think I need to start bribing my friends with food and cocktails just so I can use their hands for photography once in a while.
Don’t get me wrong, Nate is an excellent hand model, but food styling is definitely not on his top 10 list of things to do on a Sunday. So from now on, let the bribery begin!
Anyways, back to this cocktail. The recipe for this baby is super simple: 1 shot of gin, 2 shots of fresh grapefruit juice, ALL the ice, and top the whole thing off with some cucumber seltzer. Ohh, and add in some pretty garnishes, of course.
I definitely picture this as an amazing brunch drink, especially on a spring holiday (maybe Easter or Mother’s Day?!?). But I could totally see myself enjoying this with dinner too, or all day long for that matter!
And you can easily adjust the strength of the drink by playing with the amounts of each ingredient. Want a more substantial drink? Just up the gin to 2 shots. Want something a little fruiter? Add in an extra shot of grapefruit juice. It’s seriously delicious any way you make it!
So if you need a little pick-me-up to end your busy Monday or just want to welcome in spring (and cross your fingers it’s really here), this cocktail is your JAM! Ohh, and if you have leftover grapefruit juice, you’re halfway to making these Grapefruit Toasted Coconut Pancakes for breakfast tomorrow. I may be exaggerating a bit with the halfway thing, buuttttt you catch my drift 😉
