Mediterranean Lavash Pinwheel Roll Ups

 

Ok, so today’s recipe isn’t exactly a “recipe”. There isn’t an ounce of cooking involved— just a little slicing, spreading, and layering— which is totally my kind of recipe for a hot summer day.

But I will promise you that this “recipe” is absolutely DELICIOUS! Packed with my favorite Mediterranean flavors, all rolled up into a few messy bites and totally ready for your next barbecue or picnic.

Ummm, sign me up!

Back a few months ago, I hosted my friend’s baby shower and was trying to come up with simple “picnic style” recipes that were pleasing to a variety of eaters. This can be kind of difficult for me, since I’m so used to how I eat, and so easily forget that not everyone likes to eat this way. What?!? Not everyone in North Carolina is a healthy vegetarian?!? Ohhh jokes!

So after much thought, I knew I wanted to make some sort of pinwheel or wrap-style-roll-up. Everyone can get on board with those, right??? But every pinwheel recipe I found online was packed with cream cheese, deli-meat, and processed ingredients… no thanks.

So I went with the most crowd-pleasing flavors I could think of (Mediterranean, duh) and decided to just wing it. Man, am I glad I did!

A thick spread of hummus, followed by layers of crunchy cucumber, roasted red pepper, salty olives, and, of course, some fresh dill <— that’s a winning combination right there! And better yet, everyone loved them! I think this was one of the most popular dishes I made for the whole spread and was surprised by all the compliments they got.

So of course I had to share them with you today! Since it’s picnic season and all. I could totally see these on the table at a 4th of July barbecue or thrown together for a impromptu picnic in the park.

And if you’re not dairy-free, feel free to add into some crumbly feta cheese for another pop of flavor. I tried this with some of my roll ups and it was a really nice touch (and even more crowd-pleasing).

Mediterranean Lavash Pinwheel Roll Ups

Serves 2-4
Prep time 10 minutes
Dietary Vegan, Vegetarian
Meal type Appetizer, Lunch, Main Dish

Ingredients

  • 2 lavash wraps (I used whole wheat)
  • 1/2 cup hummus of choice
  • 1 Medium cucumber, sliced
  • 1/4 cup black olives, sliced
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup roasted red peppers, sliced
  • fresh dill for garnish

Directions

Step 1
Lay out 2 lavash wraps and spread both evenly with hummus. Start by layering cucumbers across the wrap, about 1/2'' apart from each other. Leave about 2'' empty at the bottom of your wrap for rolling purposes.
Step 2
Next, place roasted red pepper slices around the cucumbers, and sprinkle on black olives and tomatoes. Last, garnish with some freshly chopped dill. Tightly roll your wraps and use the hummus to almost glue the end of the wrap to the roll. Slice each roll into 4 equal pieces and place a toothpick through the center of each piece. Lay on your serving tray or bowl and garnish with some more fresh dill!
