California Veggie Power Salad

 

Spring Break is sooo close I can almost touch it. Four more days. Four more painfully long days, thanks to my over-excitment of what’s to come during this glorious week off. In five days, I’m hopping a flight to San Francisco, ready for a week of exploring, eating delicious food, and basking in the beautiful California sunshine with my sister, who I haven’t seen in months! Oh, so much to look forward to! Now, if I could only fast forward 96 hours….

I actually traveled to San Francisco last spring break too, but for a whole different reason. Nate and I were checking out all his top law schools acceptances and decided to turn his Berkeley visit into an mini-vacation. We explored the breath-taking city, ate at some incredible vegan/ vegetarian restaurants, drank glass after glass of wine in Sonoma, and, oh yeah, we checked out Berkeley 🙂 We dreamed of moving to San Francisco, finding an apartment in the city, and never looking back… but, obviously, our east coast roots kept us on the other side of the country. We’re so happy here in North Carolina, but that doesn’t mean I don’t dream of California still. I mean, you can’t beat that weather!

Coincidentally, my sister moved out to San Francisco a few months ago and I immediately booked a flight to go visit. My mini-vacation there last year was just a tease that kept me wanting to go back so badly, and this was the perfect opportunity. I can’t wait to share all our amazing adventures in the upcoming weeks. Any good suggestions of places we must visit or eat at???

Oh yeah… and there’s this salad I created! In honor of my upcoming trip, I made a California Veggie Power Salad topped with a tangy dijon vinaigrette that is to die for. I love this salad so much, I swear I devoured it in 5 minutes flat. That perfect combination of crunchy vegetables, creamy avocado chickpea salad, and tangy vinaigrette kept me eating bite after delicious bite. California certainly does it right!

California Veggie Power Salad {pumpkin & peanut butter}

 

California Veggie Power Salad

Serves 1-2
Prep time 10 minutes
Dietary Gluten Free, Vegan, Vegetarian
Meal type Salad

Ingredients

for the avocado chickpea salad

  • 1 ripe avocado
  • 1 15 oz can of chickpeas, drained and rinsed
  • 1 tbsp whole grain dijon mustard
  • salt and pepper, to taste

for the salad

  • 2 cups romaine lettuce, chopped
  • 1 medium tomato, sliced
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup carrot, grated or spiralized
  • 1 handful of alfalfa sprouts
  • avocado chickpea salad, 1 scoop

for the dijon vinaigrette

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tablespoon shallot, finely diced
  • 2 tsp whole grain dijon mustard
  • 1 tsp agave
  • pinch of salt and pepper

Directions

for the avocado chickpea salad
Step 1
Mash together avocado, chickpeas, dijon mustard, salt and pepper until it reaches your desired consistency.
for the dijon vinaigrette
Step 2
Whisk together all the dressing ingredients in a separate bowl.
for the salad
Step 3
Layer chopped romaine in a large bowl. Top the romaine with your desired amount of tomato slices, cucumber, sprouts, red onion, carrots, and avocado chickpea salad. Pour on the dijon vinaigrette and mix away!
