Can you believe Thanksgiving is already NEXT week??

Eeeeee I’m so excited already! I wish we could just fast forward through this week and jump straight into Thanksgiving prep, but I guess I can contain myself for another 10 days. There is just something about these holidays that gets me all giddy!

So of course I’ve been thinking through my Thanksgiving menu already, but I’ve taken it a step further this year to things about pre-Thanksgiving snacks— because obviously people are going to get hungry while the big meal is being meticulously prepared.

And I promise you these babies are EASY. Like so easy you only really need 4 ingredients and 30 minutes of your day (almost all of which include bake time). SO easy I could probably assign this task to Nate while I’m busy with ALL the other food we’ll be eating that afternoon. That easy!

It’s mostly thanks to my very favorite prepared guacamole, made by the one and only GOODFOODS. You guys, this stuff is the BEST! Since avocados are no longer in season and are ridiculously expensive (and small), sometimes prepared guacamole is the way to go when I still need my creamy avocado fix. But I’m still pretty picky about prepared foods since I don’t love added ingredients or preservatives. But not to worry, that is certainly not the case with this guac.

Just check out the list of ingredients: hass avocados, tomatoes, red onions, onions, jalapeños, cilantro, lime juice, sea salt, and garlic. That’s it! Literally, those are the exact ingredients I put in my own homemade guac, so this just saves me a whole lot of time!

And on Thanksgiving day, time is money, baby.

I first discovered GOODFOODS back when I made these Vegan Loaded Nachos with Chili Cashew Cheese a few weeks ago. Talk about another easy appetizer. Anyways, I got seriously addicted to this stuff and cannot get enough of it since. Better yet, I’ve found it both at Costco (in bulk) and Target (so convenient since I’m always there) so it’s become a regular in my fridge. Roasted Sweet Potato Bites with Guacamole

Serves 4-8
Prep time 5 minutes
Cook time 25 minutes
Total time 30 minutes

Ingredients

  • 4 sweet potatoes, sliced into 1/4''' rounds
  • 1 tablespoon extra virgin olive oil
  • salt and pepper
  • 1 cup guacamole
  • 1/4 cup fresh diced tomatoes
  • 1/4 cup sliced green onions

Directions

Step 1
Preheat the oven to 400 degrees. Toss sweet potato rounds in olive oil and sprinkle with salt and pepper. Spread over a baking sheet and roast for 25 minutes, flipping once during cook time.
Step 2
When potatoes are done roasted, remove from oven and top with a scoop of guacamole, a few diced tomatoes, and a sprinkle of green onion.

  2. What an easy and delicious appetizer! Do you recommend these be served warm or can they be made ahead of time and served room temp?

    • Thanks Ashley! I think you could do it either way. Mine are usually at room temperature by the time I eat them and they taste great, but I’m sure they’re also great fresh out of the oven 🙂
