I think this is the most excited I’ve ever felt for a Monday morning because WE’RE GETTING MARRIED IN 5 DAYSSSS!! What?!?! Like, seriously, where did the time go? I feel like we’ve been planning for ages now and it honestly felt like the big day would never come.

But here we are. Five days out and I don’t even know what to do with myself.

Of course there is still SO much to do, especially since we took on a lot of DIY projects, but I luckily have lots of help from family traveling in early. Therefore, I’m going to *try* to just relax and enjoy these next few days of preparation.

Someone remind me I said that in two days, please. #typeAproblems

These past few months of wedding prep have already brought such joy to my life, between extra visits with friends and family at our engagement party and bridal shower, long chats with my mom and mother-in-law over ALL the intricate details, the crafting (ohhh yeahhhh i’ve been loving it), and this beautiful virtual bridal shower that my blogging buddies threw me a few weeks ago.

YOU GUYS, I was almost in tears when I opened my Instagram and saw all these gorgeous recipes these ladies had created, all inspired by my favorite foods: pumpkin and peanut butter, of course 🙂 It made me realize how lucky I am to have these amazing virtual friendships, created simply by our shared love of all things food, even though so many of us have never met in person. These ladies are so thoughtful and generous and I’m so glad to have met them through this crazy blogging world! What a beautiful thing, especially in a time where the negative is so prevalent.

Now onto this PASTA! This is an adaption of one of my very favorite pasta dishes on this blog, this Creamy Garlic & Leek Autumn Pasta. I decided to simplify it a bit with some tender roasted cauliflower, fresh thyme, and LOTS of minced garlic. Ohh and the biggest noodles I could find at Whole Foods 😉

It’s warm, creamy, cozy, and oh-so-perfect for this fall season (even though it doesn’t quite feel like it yet here in NC). I throw it together a lot on weekday nights because it tastes so indulgent, but it’s super quick and healthy!

It’s also very versatile— you can easily substitute your favorite fall veggies in place of cauliflower, maybe some roasted delicata squash or crispy brussels sprouts, or even add some crispy chickpeas or chicken if you’re looking for extra protein. Just load up that creamy, dreamy sauce!

Creamy Garlic, Thyme, and Roasted Cauliflower Pasta

Serves 4-6
Cook time 30 minutes
Dietary Gluten Free, Vegan
Meal type Main Dish

Ingredients

  • 1 medium head cauliflower, chopped into florets
  • 1 tablespoon extra virgin olive oil
  • sprinkle of salt and pepper
  • 10oz pasta of choice (use gluten free if needed)
  • fresh thyme, for garnish

for the cream sauce

  • 1 tablespoon olive oil
  • 7 cloves garlic, minced
  • 3 tablespoons flour of choice (I used whole wheat, but use gluten free if needed)
  • 1 - 1 1/2 cup unsweetened almond or soy milk
  • 1 teaspoon fresh thyme, chopped
  • salt and pepper, as desired

Directions

Step 1
Preheat the oven to 400 degrees F. Chop cauliflower into bite-sized florets, toss then in 1 tbsp of olive oil, salt, and pepper, and spread across a baking sheet. Bake for 30 minutes, tossing once or twice throughout.
Step 2
In the meantime, boil water in a large pot. Add in pasta of choice and cook according to directions. Drain and set aside.
Step 3
To make your creamy garlic sauce, start by drizzling 1 tbsp of olive oil in a medium sized skillet over medium heat. Add in minced garlic and sauté for 1-2 minutes, until fragrant. Add in 3 tbsp of flour and mix until coated. Slowly pour in the milk a little bit at a time, whisking as you pour. I used a little over 1 cup of milk in my sauce, but use more if you want a thinner consistency. Add in a hefty pinch of salt and pepper, thyme, and simmer for 3-4 minutes, or until sauce has reached the desired consistency.
Step 4
Drain your pasta, top it with the sauce and cauliflower, and stir to coat. Top with a little more freshly chopped thyme and dig in!

  1. Eeeexciting! I didn’t realize your wedding was already coming up this week [I’m terrible at keeping up with all kinds of dates/birthdays etc.]. Keeping my fingers crossed it will be all you could ever ask for!
    This dish sounds amazing – creamy sauce and roasted cauliflower, amazing. The extra garlic must add a serious flavour punch, too.
