Watermelon Mint Mimosas

 

Today’s post feels slightlyย odd for me because— strangely enough— I’ve never really liked mimosas.

I know.

I’m probably the only person who’s walked this earth to say that, but that OJ champagne combo was just never my thing. Maybe it was a little too sweet, or a little too tart, it was never struck my fancy.

Bloody Mary’s on the other hand. Now that’s a brunch cocktail I can get on board with! But we’re not making Bloody Mary’s today. We’re making mimosas. And the whole world has turned upside down!

So what’s one way you can amp up your typical mimosaย to make it fresh and light and flavorful??? Why you substitute fresh squeezed watermelon juice instead of orange juice of course! Plus a little mint and a squeeze of a juicy lime and you’ve got yourself a winner.

And that’s exactly what I did.

It’s super simple, made in about 10 minutes, and one of the freshest summer cocktails I’ve ever tasted! Well, when watermelon is involved, how can it NOT be?

These cocktails are totally perfect for a Sunday brunch, especially this Sunday because it’s 4th of July weekend!ย Nate and I will be at the lake for the long weekend, and I can totally picture us sipping these all day morning long (while lounging by the water of course ๐Ÿ˜‰ ). Thanks to that refreshing watermelon, these babies fit almost any party or activity you’ve got planned for the weekend. So go get that watermelon and let’s get boozin’!

Watermelon Mint Mimosas

Serves 4-6
Prep time 10 minutes
Dietary Gluten Free, Vegan
Meal type Beverage

Ingredients

  • 1/4 large watermelon, cubed (or half of a small watermelon)
  • 1 lime, juiced
  • 6 fresh mint leaves
  • 1 bottle of dry champagne

Directions

Step 1
Cube 1/4 of a large watermelon and freeze 8-12 pieces (to become your ice cubes in the drink). Place the rest of the cubed watermelon into a food processor and puree until mostly smooth. Use a fine mesh strainer to strain the watermelon puree, getting out all of the pulp and making a thin juice. Whisk the juice of one lime into the watermelon juice.
Step 2
Place 2 watermelon "ice cubes" into each glass, along with a few pieces of fresh mint leaves. Pour the desired amount of watermelon lime juice into each glass. Top them off with your desired amount of champagne and garnish with a triangle of watermelon!

  1. Nope you are not alone! I’m not a big mimosa person at all … but I do like them when they are interesting! (i.e. not orange juice!) Loving the watermelon!!
