Man, have I been getting those summer cravings lately! Juicy fruit, refreshing smoothies, luscious ice cream, and, best of all, POPSICLES!

Call me a 7-year-old, but I still love me a good popsicle.

Back when I was a kid, I totally grew up in one of those neighborhoods where the ice cream truck was a summer staple. As soon as we heard that familiar “doo-doo-do-do-do-do-doo-doo” in the distance, we’d be begging our parents for a dollar and high-tailing it across the street to the line. Within minutes, our faces would be covered in that glorious florescent red and blue dye from our Push Pops and Screw Balls (remember the one with the gum ball?!?). Ahh those were the days!

But in the middle of my childhood, my family moved out of the state to a quaint little neighborhood in the country— which was great for playing outdoors, but not so great for getting the ice cream truck to appear (apparently they don’t frequent neighborhoods with only 7 houses). We moved right at the beginning of the summer, so between having a hard time making friends (living in the middle of nowhere) and missing our old summer routines, it was definitely a tough change for us kids.

So my mom, being the saint that she is, stocked our freezer with every kind of popsicle and ice cream bar you can imagine and we’d play “ice cream truck” right inside our own house. Yup, she totally sang that wonderfully annoying song and we’d all come running in, ready to pick out our treat. Such a small act really did brighten our summer as we were adjusting to our new life in this new, foreign home. It’s the little things that you remember— and that’s totally one thing I’ll never forget.

But weren’t we talking about popsicles??? Sorry ’bout that huge tangent. Let’s talk about THESE POPSICLES.

These popsicles are literally the easiest dessert (or snack, heck, or breakfast) known to man! Yogurt, fresh strawberries, dark chocolate. That’s it!

And I’m not using just any ol’ yogurt here— you gotta get the good stuff! Annie’s Whole Milk Organic Yogurt is literally the perfect base for these refreshing pops. Rich, creamy, perfectly sweet— not to mention how awesome the ingredients are. I love how their yogurts are sweetened with real fruit— no artificial sweeteners, synthetic colors, or preservatives— and is made with organic whole milk from cows not treated with antibiotics, synthetics hormones, or pesticides. Love you Annie’s!

I used Annie’s Summer Strawberry flavor, since I wanted to go with a “chocolate covered strawberry” theme, but you could totally change it up with their Very Vanilla or Berry Patch flavors as well.

All you do is throw 16 oz of yogurt in your blender with 2 cups of fresh strawberries. Pulse the mixture a few times to break down those strawberries, pour it into your popsicle mold, and freeze! I drizzled mine with a little dark chocolate once they were frozen and it was the perfect finishing touch.

It honestly tasted like I was eating a frozen, creamy chocolate covered strawberry! Gahhh, summer get here soon!

Chocolate Covered Strawberry Yogurt Popsicles

Serves 6
Dietary Gluten Free, Vegetarian
Meal type Dessert

Ingredients

  • 16 oz Annie's Organic Whole Milk Organic Yogurt, Summer Strawberry
  • 2 cups fresh strawberries, chopped
  • 1/4 cup dark chocolate chips

Directions

Step 1
Place 16 oz of Annie's Organic Summer Strawberry yogurt in your blender with 2 cups of chopped strawberries. Pulse a few times until strawberries are broken down and slightly mixed into the yogurt.
Step 2
Pour yogurt mixture into 6 popsicle molds, filling to the top. Place in the freezer for 1 hour, then add slide popsicle sticks into each mold and continue freezing for 4-6 hours, or over night.
Step 3
Once frozen, run popsicle mold under hot water until popsicles slide out easily. Place on a parchment lined baking sheet and drizzle with melted dark chocolate chips. The chocolate will harden instantly, so you can dig right in!

I can’t wait to try these popsicles, chocolate-covered strawberries are one of my favorite treats!!   3. That’s so sweet about your mom playing ice cream truck with you when you were younger! We always looked forward to that song entering our neighborhood 🙂 These popsicles look so delicious, Liz! I love how simple these are too…only 3 ingredients! My favorite popsicle is a chocolate fudge bar, but anything fruity is a close second. I’ll have to give these a try soon!
