Coconut Watermelon Slushies


Let me start with this— I take absolutely no credit for this recipe, whatsoever. If we can even call it a recipe because it is SO simple and uses all of 3 ingredients.

But anyways, credit goes to my good friend Marissa who made these for me during one of our {many} pool dates last summer. And I was seriously hooked!



While I was living in the DC area few years ago, I had (and still have) the most amazing bunch of teacher friends who made my work life so much fun and sanity so much easier to hold on to (if you’re a elementary school teacher, you know what I’m talking about). Not only did we work so well together during the school day, but we also hung out all the time outside of work, usually having these awesome potluck parties and cookouts with the most delicious food.

During our summers, we’d meet up at the pool, coolers in tow, and spend hours eating and chatting and loving life. Ahh summer break! That’s where these Coconut Watermelon Slushies come into play.



One day, my friend brought a huge container of this amazing watermelon coconut mint concoction and I was in HEAVEN. Fruity, creamy, icy— the perfect pool drink, or summer drink for that matter. If that wasn’t enough, she topped them off with a little coconut rum, so if you’re in the mood for an adult beverage, I totally recommend.

As soon as I found out how simple they were to make, I knew I had to recreate and share these with all you wonderful readers. Try them. Immediately.



This post came at such perfect timing because tomorrow is officially my last day of school! Yes. That’s right. As of tomorrow I will officially be on SUMMER VACATION!!! I’m not excited or anything. Now don’t get too jealous, because I still work during the summers as a nanny, but it’s such a wonderful (and necessary) break from the school routine to recharge and rejuvenate before starting all over again in August. Not to mention summer concerts, picnics, bbq’s, ice cream, cocktails, beach trips, walks, gahhh I just love summer!

So here’s to the first day of (teacher) summer and 2 months of relaxation! And you bet I’m making one of these tonight— adult style 😉



Coconut Watermelon Slushies

Serves 2-4
Prep time 5 minutes
Dietary Vegan
Meal type Beverage, Snack


  • 2 heaping cups of watermelon, frozen in chunks
  • 3/4 cups light coconut milk (or more, depending on juiciness of watermelon)
  • 1 handful of fresh mint leaves


Step 1
Blend all ingredients together in a high speed blender until it has reached a "slushie" consistency. You may need to add more/less coconut milk depending on how juice your watermelon is. Enjoy!

  1. I have to try this! I love coconut but am not a fan of the texture of watermelon – but combining the two sounds perfect.

    • It totally understand— textures can weird me out too. This is definitely a great way to get that watermelon flavor, without that consistency. Let me know what you think 🙂

  2. Watermelon and mint are such a delicious combination! I love how simple this is! You just throw everything in the blender, and boom! It’s instantly a delicious, refreshing slushy! I can’t wait to try this once the watermelon plant in our garden finally grown watermelons!
