I just realized it’s been FOREVER since I’ve posted a breakfast recipe on this blog. Which is strange, because breakfast is quite regularly my favorite meal of the day. Except when I change my mind and it’s lunch. Or dinner. But anyways, it was about time! And boy, have I whipped up a good one šŸ™‚

For those of you that know my eating habits, you know I’m an oatmeal fanatic. It’s my go-to breakfast, literally, every. single. day. Overnight oats with cinnamon, bananas, and sliced almonds. Ahhh perfection! It’s the perfect combination of sweet and savory flavors in my book AND it keeps me full all morning while I’m teaching the little ones (which is the most important part).

But once in a while, I like to change it up. Back when we first moved to Durham, we went to this awesome little cafe that serves a baked oatmeal of the day every morning. Uhh, sign me up! On our first visit, I tried a sample not knowing what to expect, and was blow away by how awesome it was! Of course I ordered a huge bowl and devoured it in minutes. I knew then that I had to try my hand at my own baked oatmeal—- buuuttt that kind of slipped my mind for a while (whoops). Until now!

This Blueberry Banana Pecan Baked Oatmeal is hearty, flavorful, and full of all my favorite breakfast ingredients: oats, fruit, nuts, chia seeds, cinnamon, and soy milk. Can’t get much better (or healthier) than that. It’s basically like eating a super healthy oatmeal cake. Soft, warm, and perfect with a steamy cup of dark roast coffee. Better yet, it’s SO simple to make. Like I’m talking mix it up in a bowl, throw it in the oven, and you’re done kind of simple. If I haven’t sold you yet, what if I told you it was naturally vegan and gluten free? Yeah, I know. Just try it already šŸ˜‰

Blueberry Banana Pecan Baked Oatmeal

Blueberry Banana Pecan Baked Oatmeal


  • 2 cups old fashioned oats
  • 1 3/4 cup unsweetened soy milk (or milk of choice)
  • 2 tablespoons chia seeds
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup or agave
  • 3/4 cups blueberries
  • 1 teaspoon baking powder
  • 1/2 cup raw pecans, chopped into pieces
  • 1 Large banana, diced


Step 1
Preheat the oven to 375 degrees and spray an 8x8 baking dish with nonstick cooking spray (I use olive oil based).
Step 2
In a large bowl, mix together all the oatmeal ingredients except for the blueberries and bananas. Set aside and let the flavors meld.
Step 3
In the meantime, cover the bottom of the greased baking dish with banana slices. Sprinkle with half of the blueberries. Pour the oatmeal mixture over the blueberries and bananas and spread it evenly across. Sprinkle with the remainder of the blueberries.
Step 4
Bake for 40 minutes, then let cool for at least 10-15 minutes. The oatmeal will stick together more the longer you let it cool, so use every ounce of patience you've got to not dig right in!
