Creamy Superfood Berry Smoothie

 

Spring is here! And as bittersweet as it is to put my favorite winter squashes and brussels sprouts to rest for a few months, I’m more than willing to make the trade for those crisp, leafy greens, crunchy asparagus, and fresh green beans. My grocery store is bursting with color, produce is looking better than ever, and even the berries are beginning to ripen to that {almost} perfect sweetness. Just wait till May rolls around—- or don’t!

So I definitely couldn’t wait. I can’t help it. As soon as the weather starts getting warmer, I start craving those fresh fruity flavors. Badly. And one of my favorite ways to inhale those delicious flavors is in the form of a smoothie.

I’ve decided that smoothies are GENIUS. Fruit, nuts, seeds, milk, greens— you’ve basically got all your food groups packed into one slurp-able snack. And whoever thought of putting greens into smoothies deserves a million dollars. Why not throw some extra vitamins and nutrients into an already ridiculous healthy, tasty drink? It just makes sense!

With so many ways to smoothie nowadays, I decided to go pretty simple with this superfood smoothie. Mixed berries, rainbow chard, soy milk, banana, and chia seeds. Oh, and avocado! I can’t forget the secret ingredient for pure creaminess. It really does work wonders. I love how this smoothie is not only creamy, but also the perfect balance of sweet and tart. As much as I have a huge sweet tooth, I don’t like overly sweet drinks, so this earned an A+ in my book. I’ve been loving this smoothie as a post workout snack, but it would also make a great breakfast on-the-go!

Creamy Superfood Berry Smoothie {pumpkin & peanut butter}

Creamy Superfood Berry Smoothie

Serves 1-2
Prep time 5 minutes

Ingredients

  • ½ avocado
  • 1 heaping cup frozen mixed berries (blueberries, raspberries, strawberries)
  • 1 ripe banana
  • 2-3 large leaves of rainbow chard (not stems)
  • ¾ cup milk of choice
  • 1 tbsp chia seeds

Directions

Step 1
Place all ingredients into a high speed blender. Blend until smoothie reaches your desired consistency and slurp away!

  1. This smoothie looks awesome! I love the blueberry polka dots in the background. I’ve never tried avocado in a smoothie before, but I might have to now!
    My favorite way to smoothie is for breakfast! My favorite smoothie right now is 2 frozen bananas, a cup of almond milk, 2 huge handfuls of spinach, and peanut butter! I like eating mine with a spoon so it lasts longer 🙂
    Also, I’m loving your new site! The logo is super cute!

    • Ellie— that smoothie sounds delicious! I mean, it has peanut butter in it, so it’s a done deal 🙂 I’m so glad you like the new site. It’s been such a fun project re-vamping it over the past few weeks!
