Holiday baking season has officially arrived!! Key word “officially”— because we all know many of us having been unofficially baking things here and there for a solid 2 weeks already LOL!

But before we start talking cookies, which I’m VERY excited to talk about, we need to talk about GILMORE GIRLS! Have you watched yet?!? SPOILER ALERT. Stop here and scroll directly to the recipe if you haven’t. Then make these buckeyes and go watch it immediately, then come back and we’ll chat!

I told you already in our premier round up a few weeks ago about how I literally grew up with this show and it brings back so many memories from my teenage years. So as soon as I turned on the new season and heard the familiar “ba, ba, ba, ba” in the background, I felt as giddy as I did at age 14. Gahh where do I even start!

This season was like an emotional rollercoaster. I found myself laughing out loud at the typical Gilmore banter, Kirk’s ever-ridiculous jobs, Paris’ hilarious situation (omg her job— it just totally fit!), and the pop-culture references that so smoothly adapted with the times. Then the next moment I was crying as Emily mourned Richard’s death (RIP), as Rory and Lorelai had their biggest blowout to date, as Lorelai found herself while doing “Wild” (never saw that plot line coming) and when she was finally able to give her father the eulogy she wanted, and, of course, that wedding!

And then there’s the ending. Those last four words. My jaw was literally on the floor.

But the more I thought about it, and the theme of the season— everything coming full circle— it made total sense. Logan is Rory’s Christopher. He’ll never be quite enough (as much as I do love she and him together). Rory will have her turn at single-motherhood, she’ll work her way out of her 30-something-life-crisis, and she’ll eventually meet “her Luke”. Which we all know will mean Jess. I mean, come on, the scene when he’s looking at her through the window. Gahhhh!

All I know if, there needs to be a second new season IMMEDIATELY!

Apologies to all my non-Gilmore Girls fans. I just needed that moment. But if you did watch— I’d love to hear your thoughts in the comment below! Were you an emotional wreck like me by the end?? Loved it? Not a fan?

So the reason we’re ALL here today is cookies! And I’m starting the holiday baking season off with the easiest of recipes. Vegan & Gluten Free Buckeyes!

Now remember, this is coming from a true classic buckeye fan— I could seriously eat about 12 of the classic butter and powdered sugar-laden version— but this lightened up version is FANTASTIC! I swear I didn’t miss those sticks of butter one bit. I substituted it out with a whole lot of natural peanut butter, coconut flour, maple syrup, and coconut oil, and you would not believe how amazing they taste!

Packed with that peanut butter punch and wrapped in smooth, rich dark chocolate— ooooh! I already have plans to throw another batch together next weekend!

Similar to the classic version of this cookie, these buckeyes are best kept frozen and then taken out right before you serve them. If you’re looking to make these for your cookie platters, this recipe is best doubled or tripled because it makes a smaller batch than normal— but I promise you they will be the easiest cookie you’ll make this season.

Vegan & Gluten Free Buckeyes

Serves 15-20
Prep time 45 minutes
Dietary Gluten Free, Vegan
Meal type Dessert

Ingredients

  • 1 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 tablespoon coconut flour
  • 1 tablespoon melted coconut oil
  • pinch of salt (if peanut butter is unsalted)
  • 1/2 cup dark chocolate chips, melted (use vegan if needed)

Directions

Step 1
Add peanut butter, coconut oil, maple syrup, coconut flour, and salt to a big speed blender. Puree until all ingredients are combined into a thick "dough". Roll the dough into 1'' balls and place on a parchment lined baking sheet. Freeze until solid (about 30-45 minutes)
Step 2
While balls are freezing, melted dark chocolate using a double boiler or in the microwave. Just watch it closely to make sure it doesn't burn! Once the balls are frozen, use a toothpick to dip each ball halfway into the melted chocolate, then place back on the parchment lined baking sheet. Freeze for another 10-15 minutes, or until chocolate has hardened. Eat immediately or keep frozen until serving time!

  1. OMGGG Liz! Just finished it last night. SO good. My boyfriend totally guessed what the last words were going to be by the end of “Spring.” Still, it was pretty amazing. I got legit goosebumps during a few different scenes, and definitely teared up. The only thing I didn’t get… the 18 minute musical! What??? Anyways, sorry for the rant but I am just so stoked to talk about it. Do you listen to Gilmore Guys? They are doing a first reactions episode, check it out. Love these buckeyes, they look super <3

    • Yeah that musical thing was pretty ridiculous and random lol! I also thought it was a little slow to find it’s grove at first in the Winter episode, but it quickly pulled it together and was ultimately amazing. I’ve never listened to Gilmore Guys but I’m totally going to look that up right now— thanks for telling me about it 🙂 Gahhh I just want another season immediately!
