Vegan Mediterranean Orzo Salad

 

Hi! We’re going to start this Monday with the simplest of recipes…. one that I’ve actually had sitting in my post queue for the longest time, but I just got around to editing the photos.

Daresay it’s been busy month, what with the wedding and all 😉

But I promise you it was worth the wait because not only is this salad one of the easiest salads to throw together, but it is utterly DELICIOUS! All your favorite Mediterranean flavors chopped up and mixed into one tangy, tasty pasta salad. Now that is a pasta salad I can stand by.

This Mediterranean Orzo Salad is one that I make ALL year round. It’s perfect for picnics during the summer, potlucks and football parties during the fall, and quick lunches during the winter and spring. Not to mention it’s a total crowd pleaser! I swear someone asks me for the recipe EVERY time I make it at gatherings. And now it’ll be quite easy to share 😉

On another note, how was your weekend?!?

We had such a picturesque fall weekend— the weather was a perfect 65-70 degrees, the sun was shining, the leaves were just starting to change. Fall perfection!

Besides the beautiful weather, I felt like we had a great balance of relaxation and socializing this weekend, which always puts me in the best mood to start off a fresh work week. I love, love, love catching up with friends, but I also need some good old down time to rejuvenate for Mondays with my kiddos at school, so it feels so good when we get that perfect balance in a weekend. You feel me?

Ohh and to make the weekend even more rejuvenating, I’m slowly getting back into my yoga practice. I had taken a brief break from yoga over the past few months, mostly due to a new school schedule and wedding craziness, but it felt SO good to get back on my mat this past week. I forgot how much my body craves that regular stretching and strengthening, so my goal is to keep this routine going as things continue to settle down for us here at home.

Vegan Mediterranean Orzo Salad

Serves 4-8
Prep time 15 minutes
Cook time 10 minutes
Total time 25 minutes

Ingredients

  • 10oz dry orzo (I used whole wheat)
  • 1 medium cucumber, sliced
  • 1 Medium red onion, diced
  • 1 pint cherry or grape tomatoes, quartered
  • 1/2 cup sliced olives
  • 1 15 oz can of chickpeas, drained and rinsed
  • for garnish: freshly chopped parsley

for the dressing

  • 1/4 cup extra virgin olive oil
  • 4 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Directions

Step 1
Boil a large pot of water and add in the orzo. Turn down to a simmer and cook according to box directions. Drain and set aside.
Step 2
While pasta is cooking, chop vegetables and combine them all in a large bowl: tomatoes, cucumbers, red onion, olives, and chickpeas. Stir in the orzo once it is drained and cooled.
Step 3
Whisk together the dressing: olive oil, red wine vinegar, oregano, basil, garlic, and salt and pepper. Pour over the salad and toss to coat. Add any additional salt and pepper needed, then top with a generous amount of chopped parsley. Serve warm or cold!

  1. This looks so goooooood! I love orzo. My mom makes a kind of similar style salad but I think she adds tomato sauce? Anyways, definitely something I would love to make <3
