If you haven’t noticed already, I have been ALL ABOUT one pan (or minimal pan) meals lately.

A few weeks ago, I shared this Vegetable Paella with a Farm Egg, which I’ve already made like 3 times since then and seriously cannot get enough of. You technically need two dishes for this one, but clean up is E-A-S-Y, let me tell you!

And then, just last week, I posted this One Pan Veggie Potato Breakfast Hash, which could not be simpler (or healthier) if I tried. Cue today: Sheet Pan Veggie Nachos with Cashew Cheese.

Yeah, we’re noticing the pattern. Between busy workdays, lots of weekend errands and travels, and baby-related activities, these one pan meals have been LIFESAVERS. Who else feels me?!?

So today, we’re keeping the super simple one-pan trend alive, but doing it SUPER BOWL style. Or just craving-nachos-on-a-Thursday-night style. Whatever floats your boat!

These nachos are not only one-pan friendly, but they’re also LOADED with veggies and creamy cashew-based chile cheese. <– Which I promise won’t have you missing the real stuff one bit! It’s creamy and just a little spicy and packed with green chile flavor. Holy NOM.

As with most of my recipes, this is very easily tweak-able with whatever ingredients you have on hand. Want to add zucchini instead of peppers? Go for it! Don’t like radishes? Just skip ‘um. I’ve tried a few other combinations of this same recipe already and they’ve all turned out BOMB.

Sheet Pan Veggie Nachos with Cashew Cheese

Serves 4-6
Prep time 15 minutes
Cook time 5 minutes
Total time 20 minutes

  • corn tortillas, of choice
  • 1 yellow pepper, diced
  • 3 jalapeno peppers, sliced
  • 1/2 cup tomatoes, diced
  • 1/2 cup radishes, thinly sliced
  • 1 avocado, diced
  • garnish: fresh cilantro leaves and sliced green onions

for the cashew cheese

  • 1 cup cashews, soaked for at least 2 hours in water
  • 4oz green chiles, in juices
  • 2-3 tablespoons water
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • salt, to taste


Step 1
Place all cashew cheese ingredients into a high speed blender and puree until smooth: soaked cashews, green chiles, chili powder, lime juice, water, and salt. Set aside.
Step 2
Preheat oven to 350 degrees. Spread tortilla chips over a baking sheet and drizzle with cashew cheese. Top cashew cheese with diced yellow pepper and sliced jalapeno pepper. Bake for 5-6 minutes, or until warm and crispy.
Step 3
Top with tomatoes, diced avocado, sliced radish, cilantro leaves, and green onions. Dig in!

  3. SO GOOD. I am actually really bad at keeping things simple hahha I always over complicate my fooood. So this is a good reminder! Definitely more sheet pan meals in my future. xx
