Happy {almost} Halloween!

I cannot believe it is the end of October already. Like, I was in Michaels over the weekend and half the store was already full of Christmas displays. WHAT!?!? Where did fall go? Are we just skipping right over Thanksgiving? Don’t get me wrong, I LOVE me some Christmas, but Thanksgiving needs some serious lovin’ in my house too.

Halloween on the other hand… not my favorite holiday. I love pumpkin everything (obviously) and any candy involving peanut butter and chocolate (Reese’s to the FACE), but all the “scary stuff” just doesn’t do it for me. Or dressing up— I think I left that joy of dressing up back in college.

BUT I do love dressing my dog up, so I’ll give one to Halloween for that šŸ˜‰ Poor Augie!

Anyways, back to Halloween. True, it’s not my favorite holiday, but I see how happy it makes all my students, and strangely my husband (who lovesss Halloween), so here we are! But we’re going to celebrate Halloween a little differently on this blog…

To celebrate this sugar-laden holiday, I’m bringing you a healthier alternative to your typical Halloween candy. Healthier, BUT it sure doesn’t taste like it!

These Dark Chocolate Coconut Energy Balls honestly taste like a Mounds bar, just in ball form.

But here’s the thing. There’s no mystery ingredients, no high fructose corn syrup, no added sugar. Just dates, nut butter, cocoa powder, oats, chia seeds, dark chocolate, and unsweetened shredded coconut. That’s it!

Sounds like a good way to balance out all the Halloween candy in my book!

This is actually out first year EVER having trick-or-treaters. We’ve only lived in apartments since college, mostly with a lot of young professionals, so we never had any trick-or-treaters stop by. This year, we’re living in a house in a super family-friendly area, so I have a feeling we’re going to get swamped. And Augie is going to be LOVING LIFE with all these visitors!

Dark Chocolate Coconut Energy Balls

Serves 12-15
Prep time 10 minutes
Dietary Gluten Free, Vegan
Meal type Snack

Ingredients

  • 1 cup medjool dates, pitted
  • 1/2 cup old fashioned oats
  • 1/4 cup cocoa powder
  • 3 tablespoons nut butter of choice (I used peanut butter)
  • 1 tablespoon flax or chia seeds
  • handful dark chocolate chips (use dairy free, if needed)
  • 1/3 cup unsweetened shredded coconut, for rolling

Directions

Step 1
Place pitted medjool dates into a food processor or high speed blender. Blend until dates are ground and clump into a sticky ball.
Step 2
Add in oats, nut butter, flax or chia seeds, and cocoa powder. Blend until all ingredients are completely combined. Pulse in dark chocolate chips.
Step 3
Roll mixture into 1'' balls with your hands, then roll in unsweetened coconut flakes. Repeat until all the balls are rolled. I usually get between 12-14 energy balls from this recipe. Refrigerate for up to 5 days or freeze for longer life!

  2. I’m with you- Halloween stopped being a thing for me in high school. We don’t have any plans this year and that’s fine by me. But I still think it’s a fun holiday, especially if you have kiddos. I love seeing their cute costumes!

  3. I’m with you on the Halloween front – not the biggest fan (except, again, of course for the candy). But these look and sound amazing! I’m trying to keep things a little healthier and they’d totally fit any cravings!
