I’m back with some more PUMPKIN! Because I’m totally not sick of it yet, slash still can’t get enough of it. Anyone with me?! I swear I could eat all-the-pumpkin-things until December rolls around and peppermint consumes my house. You feel me?

Ohh and it’s not just any ol’ pumpkin recipe. Today, we’re combining two of my favorite recipes into one seriously easy, magically delicious bread (because I strangely love mashing recipes together).

You guessed it… pumpkin bread + banana bread = HEAVEN!

Quick breads have become a weekly Sunday ritual in my house recently, particularly because of how easy they are to throw together for weekday snacking. I’ve usually got a loaf baking away every Sunday afternoon. Well that, and a pot of broth simmering on the stove and a pan of veggies roasting in the oven and a pot of grains cooking away….

Let’s just say my kitchen turns into organized chaos by Sunday night. Which makes for busy Sunday evenings (and Nate glaring at my sink full of dishes). BUT I’m literally hugging myself when I get home from work on Monday and lunches are already prepped and dinner comes together in 20 minutes.

And this Pumpkin Banana Bread has been one of our weekly favorites for midday snacking, typically slathered with a big spread of nut butter, because, YES. It’s simple, it’s healthy, it’s hearty, and it just tastes like fall!

The thing I love most about this bread is the ingredient list. Pumpkin puree, mashed banana, whole wheat flour, pecans, coconut oil— just to name a few. But honestly, every ingredient on the list is wholesome and has nutritional benefits. It makes for such a satisfying treat once it’s baked, because I know it not only tastes amazing, but it’s also a healthy snack choice.

Healthy Pumpkin Banana Bread

  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 2 eggs
  • 1/4 cup milk of choice (I used almond milk)
  • 3/4 cups pumpkin puree
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 3/4 cup whole wheat flour
  • 1/2 cup chopped pecans
  • 1 ripe banana, sliced in half the long way (for topping)

Step 1
Preheat oven to 325 degrees F. Spray 9x5'' bread pan with nonstick cooking spray (I used coconut oil spray).
Step 2
Mix melted coconut oil and maple syrup together in a bowl or stand mixer. Add in eggs, and mix until blended. Add in the pumpkin puree, mashed banana, vanilla extract, baking soda, milk, cinnamon, and salt. Mix to combine.
Step 3
Pour in the whole wheat flour and mix until just combined. Stir in chopped pecans with a spatula or wooden spoon. Pour batter into greased bread pan. Smooth out the bread with a butter knife. Top with the halved banana as desired (optional).
Step 4
Bake pumpkin banana bread for 55-60 minutes, or until a toothpick comes out clean. Cool for at least an hour before slicing and serving!

  1. I am jealous of how organized you are! I always plan on doing a bunch of prep on Sunday, but I never get around to it haha ¯\_(ツ)_/¯ This bread looks great! I’ve actually been wanting to make a pumpkin banana bread so I might have to try this out. xx
