It’s is an exciting day on pumpkin & pb, because GET THIS…. this little blog is turning THREE today!!! <— insert all the party emojis here

I cannot even fathom the idea of this blog being around for three whole years. When I pressed publish on that first post back in 2014, I wasn’t sure it if would last 6 months, let alone 36 months! Seriously, there are no words.

Just kidding…. there are words 😉

When I look back on these three years of blogging and connecting with all you lovely readers (and all the background work that comes with it), only warm thoughts come to mind. Seriously! I’m not exaggerating. I’ve loved every second of it!

Working on this blog has been such a growing experience for me, both creatively and socially. Not only have I learned more about cooking and recipe development and photography than I ever could have imagined, but I’ve also met some of the most incredible like-minded people through this blog.

Who knew that a combination of food and the internet could bring so many people together in this crazy, wonderful food blogosphere?!? It may just be my favorite part. Well, that, and all the food 😉

So onto the big birthday! We’re celebrating this little toddler of a blog with a PUMPKIN & PEANUT BUTTER treat! Literally. Pumpkin Peanut Butter Energy Balls! So fitting.

Let’s face it, we already knew this pumpkin and peanut butter flavor combo was just magical in the fall. Like in these Pumpkin Peanut Butter Pancakes. Gahh amazinggg. But now we’re adding in some caramel-y dates and nutty coconut— aka we’ve got a REAL party on our hands!

And to make these even better, all you need are SIX ingredients and 10 minutes to make them. Happy birthday indeed!

Pumpkin Peanut Butter Energy Balls {dairy free, gluten free} | pumpkin & peanut butter

Pumpkin Peanut Butter Energy Balls

Serves 10-12
Prep time 10 minutes
Dietary Gluten Free, Vegan
Meal type Snack

Ingredients

  • 1 cup medjool dates, pitted
  • 3 tablespoons natural peanut butter
  • 1 tablespoon flax seeds (or chia seeds)
  • 1 teaspoon pumpkin pie spice
  • 2/3 cups old fashioned oats
  • 1/3 cup unsweetened coconut flakes (for rolling)

Directions

Step 1
Place pitted medjool dates into a food processor or high speed blender. Blend until dates are ground and clump into a sticky ball (see photo above).
Step 2
Add in oats, peanut butter, flax or chia seeds, and pumpkin pie spice. Blend until all ingredients are completely combined.
Step 3
Roll mixture into 1'' balls with your hands, then roll in unsweetened coconut flakes. Repeat until all the balls are rolled. I usually get between 10-12 energy balls from this recipe. Refrigerate for up to 5 days or freeze for longer life!
