Fall is finally here! And we’re celebrating today with a warm, cozy, comforting bowl of oatmeal packed with all our favorite fall flavors.

Well – except pumpkin – sorry guys. I know I’ve kinda been dropping the ball on pumpkin lately. But I promise I’ve got some pumpkin goodies coming your way soon!

Anywaysssss, we were talking oatmeal. Oatmeal is my breakfast of choice as these chilly months come upon us. Well, actually it’s my go-to breakfast any month of the year, but ESPECIALLY this time of the year. There is just something so comforting about a big bowl of creamy, piping-hot oats, loaded with all my favorite toppings and mix-ins.

And today, we’re adding a little spice to your typical oatmeal, and in the EASIEST way possible. With chai tea, of course!

Have you ever infused your oatmeal with tea before? I’ve done it a few times, mostly with green tea, but I had a strange craving for all things chai last week and, well, this happened.

Basically, I took my favorite slow-cook, creamy oatmeal recipeΒ and added a few chai tea bags to the oats during the cooking process. It was that easy! Pair that with some cozy ground cinnamon, topped off with ripe bartlet pears, crunchy pepitas, toasted coconut, and a big dollop of nut butter. Because nut butter makes everything better.

The result: fall in a bowl! The chai tea added that perfect warm, spiced flavor to the oats, not overwhelming, but totally comforting. And it paired so nicely with the pears (sorry, it was unavoidable πŸ˜‰ but seriously. it did!).

Plus, the TEXTURE. Sometimes oatmeal can feel a little one-note, you know what I mean? But adding in the crunchy pepitas and toasted coconut added the perfect texture balance to the creamy oats.

Chai Spiced Oatmeal with Pears + Toasted Coconut

Serves 3-4
Cook time 30 minutes

Ingredients

  • 1 cup milk of choice (I used almond milk)
  • 1 cup water
  • 1/2 cup old fashioned oats (use gluten free, if needed)
  • 1/2 cup steel cut oats
  • 2 chai tea bags
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1/2 cup coconut flakes (thick cut)
  • 1-2 ripe pears, sliced
  • 2-4 tablespoons nut butter of choice (I used cashew almond butter)
  • sprinkle of pumpkin seeds

Directions

Step 1
Pour milk, water, a pinch of salt, and two kinds of oats into a medium sized pot. Bring to a boil, then turn down to a simmer and add in two chai tea bags (drape the tag over the side of the pot). Cover and cook for 20-25 minutes, stirring every 5 minutes and scraping the sides of the pan so the oats don't stick. Oatmeal is done when the consistency is thick with just a little bit of liquid left (like a porridge).
Step 2
While the oatmeal is cooking, preheat the oven to 350 degrees F and spread coconut flakes across a baking sheet. Toast for 5-7 minutes, or until just turning golden. Remove from oven and set aside.
Step 3
Once oatmeal is cooked, remove tea bags and stir in a heaping teaspoon of cinnamon. Pour into bowls and top with sliced pears, toasted coconut, a sprinkle of pumpkin seeds, and a big dollop of nut butter!

  1. Wait – I LOVE the idea of using tea IN the oatmeal – genius!! I was just thinking the other day how good it would be if you made hot chocolate using tea as a base – maybe that would be good, too??! Looks delicious, Liz!
