Life has taken quite a turn over the past few weeks – and by quite a turn, I mean it’s been BUSY! There is just something about the start of fall, like a flip switches and everything just jumps into turbo mode. Know the feeling?

Yeah, me too.

Between out-of-town weddings, new jobs beginning, and getting into our routines in a new home (and new city), it’s been a juggling act even sitting down to dinner together before 8:00! Which, if you know me personally, is NOT my style. I am very much a 6 pm dinner kind of gal.

But, I must say, our little “family” dinners have become all the more special (and necessary) in this crazy season of life. It’s a small moment in our day where Nate and I (and Augie, of course) can spend time together, electronics and work aside, and truly just enjoy each other’s company.

Growing up, family dinners were essential in my house. Even though they may not have happened every night once we were all in high school and busy with sports, my parents still made sure that at least a few nights a week, we were all rounded up for a meal together. Yep, all 6 of us!

My mom was famous for interrogating us all on our day at school, making us go around the table and share our “high” and “low” of the day. I can vividly remember us all (anxty teenagers that we were) groaning and complaining our way through it, but looking back now, those conversations usually turned into some pretty memorable, and usually hilarious, evenings.

Today, well into my early adulthood, I still cherish that idea of family dinners. And even though my family is small, with life being as crazy and unpredictable as it is, these nightly meals have become one of my favorite times in the day.

So today, we’re cooking up a simple, comforting meal, perfect for your next family dinner (and a new favorite in ours!)

This Quinoa Risotto with Delicata Squash + Roasted Radishes is exactly what I think of when I’m craving a warm, cozy, fall dinner. Packed with whole grains, healthy fats, and fiber-filled veggies, this dish is not only nourishing, but also super delicious!

For this recipe, I’m using truRoots Organic Quinoa, a brand that I cook with regularly for both quality and convenience (you can buy it at Target!) Better yet, truRoots is actually on sale at Target this week, September 24- October 7 for 30% off using the Cartwheel app.

Anyways, back to this risotto. Besides the actual quinoa, there’s not too many other ingredients involved. In fact, you probably have most of them already in your pantry and fridge at home. I used vegetable stock and a little white wine to make my risotto super creamy and flavorful, but the real MVP for the ultimate creaminess is a simple cashew cream. All it involves is just soaked cashews, blended with water in a high speed blender, then slowly stirred into the cooked risotto.

You would not BELIEVE what a game changer this is! Plus, it’s naturally dairy free and packed with healthy fats. Total win!

Last, but not least, I topped my risotto off with some roasted delicata squash and radishes, the perfect blend of summer and fall veggies in one dish. You can easily sub these veggies out with any others you have on hand, but I definitely recommend giving this combo a try.

Quinoa Risotto with Delicata Squash + Roasted Radishes

Ingredients

for the risotto

  • 1 Medium yellow onion, diced
  • 1 cup dry quinoa
  • 1/2 cup dry white wine
  • 3 cups low sodium vegetable stock
  • 1 cup white beans, canned or cooked
  • 1 teaspoon fresh rosemary, chopped
  • salt and pepper, to taste
  • 2 tablespoons grassfed butter or coconut oil (if dairy free)

for the roasted vegetables

  • 1 delicata squash, halved and sliced (seeds removed)
  • 2 cups radishes, halved
  • 1 tablespoon extra virgin olive oil
  • salt and pepper, as desired

for the cashew cream

  • 1/4 cup cashews, soaked for at least 2 hours in water
  • 1/2 cup water or vegetable stock
  • salt and pepper, as desired

Directions

Step 1
Preheat the oven to 400 degrees F. Chop delicata squash and radishes, then toss in olive oil, salt, and pepper. Spread across a baking sheet and bake for 25 minutes. Remove and set aside when done roasting.
Step 2
Melt 2 tablespoons of butter (or coconut oil) in a large pan. Add in diced onion and cook on medium heat until onions are almost translucent. Add in 1 cup of dry quinoa and stir to toast for 1 minute. Stir in 1 teaspoon of chopped rosemary.
Step 3
Pour in 1/2 cup white wine and stir. Cook for 3-4 minutes, until wine reduces to about half. While this is happening, pour 3 cups of vegetable broth in a small saucepan and keep warm on low heat. Ladle about 1/2 cup of broth into the quinoa and stir. Let it simmer and reduce, then continue to add in more broth to repeat the process. You don't need to stir it religiously, like regular risotto, but I stirred mine every time I added more broth. It will take the quinoa about 20 minutes to cook and soak up all the liquid. Season with salt and pepper, as desired.
Step 4
To make the cashew cream, simply blend your soaked cashews with 1/2 cup of water or veggie broth and a little salt and pepper in a high speed blender. Depending on the power of your blender, this can take anywhere from 1-5 minutes to make it creamy. Once the quinoa is done cooking, stir the cashew cream into the risotto.
Step 5
When the quinoa risotto is done, stir in the roasted veggies and white beans, and top with a little more chopped rosemary, if desired. Season with salt and pepper, to taste.

  1. I loove the look of this risotto! So hearty + perfect for fall. I have the same fond memories of family dinners growing up, and cherish them even more now that I live so far from home! There’s nothing that brings comfort + love more than sharing delicious food with the people you care about. I’m saving this recipe for next time I head home and cook for my parents 🙂

  2. I’m a little confused regarding the recipe. The photos seem to show white beans added to the quinoa, but there are no beans listed in the ingredients. Also in Step 4 you mention cooking white mushrooms, and again I don’t see them listed among the ingredients. Thanks.

    • Hi Linda, thanks so much for catching that! I fixed the recipe (sorry, that was from a previous revision!). The white beans get added with the roasted veggies right at the end. So sorry for the confusion!

  3. I love the family dinners were a priority in your house growing up and that you still carry on the tradition for your little family. This looks like the perfect meal to gather around. I have yet to try roasted radishes but I’ve heard they are delicious!
