I am officially a free woman!!
Yup that’s right, the school year is over, summer vacation has begun, and we’re kicking it off with a trip to CHICAGO this weekend for a wedding <— insert dancing girl emoji here 😉
So let’s talk Chicago first, then we’ll get to this potato salad, I promise… that sound good? K, great.
Have you ever been to Chicago before?? I went wayyyy back in college for a solid 6 hours during a road trip, but basically that entailed eating a ridiculously awesome breakfast at Yolk and taking lots of pictures with the bean. So I wouldn’t even count that as “seeing” Chicago.
But this time, we’ll be in the city for a full day and a half (what?!?)— since our first leg of our trip will be spent at the wedding in the ‘burbs— but even with our short stay, I seriously can’t wait!
City travel, if you couldn’t tell already from all my past travel posts, is my FAVORITE kind of travel. I seriously can’t get enough of visiting new cities, exploring different neighborhoods, trying ALL the food, taking in the urban culture, and walking, walking, walking. It’s just the best way to travel.
But this trip has been made even more special because of one particular thing we’ll be doing Saturday night. And that thing is called seeing HAMILTON! You guys. I have been counting down the days until this moment for an embarrassingly long amount of time and I can’t believe it’s finally here!!!
If you didn’t know this about me already, I was a total theater geek back in high school. Slash still am. But anyways, I was in way more musicals than I can even count and spent probably too much time listening to show tunes than any normal teenager probably should. So of course when Hamilton came out last year, I became obsessed. The soundtrack was on REPEAT in my car for like, 6 months.
And when the show opened in Chicago last summer around the same time we found out we were going to be traveling to Chicago— well, that was just a done deal. So Nate and I totally splurged and bought each other tickets for our birthdays and it was one of the best decisions we made all year. I haven’t even seen the show yet and I’m saying that! I can just tell already it’s going to be SPECTACULAR.
Whew, ok, so that’s our plan for the weekend. Beside the wedding of course. And lots of Chicago exploring and delicious eats. But if you have any recommendations of places we must visit or restaurants we must go to during our short stay, please let me know! We are all ears!
Ok, thanks for baring with me. Now let’s talk potato salad.
This, honestly, is my favorite potato salad I’ve EVER had. I’ve never really been into the super mayonnaise-y potato salad for some reason– maybe it’s a texture thing— but an herby vinaigrette, now THAT I can get behind.
Basically I whipped up this luscious dressing with lots of fresh parsley and dill, lemon, dijon, shallot, and olive oil. I then tossed that magical stuff with some tender potatoes, crunchy asparagus, and zesty radishes. Ohh, and more chopped herbs. Oh my goodness. It was FANTASTIC.
That zest from the lemon, that crunch from the asparagus, that bite from the radish— talk about a perfect combination of flavors. And I loved this dressing so much that I made it again the next day for a big green salad and it was just as delicious.
This salad would be absolutely divine at a summer picnic, barbecue, or just on a Sunday afternoon at home. I’ve already made it twice since this first creation and I can already foresee it many times in my future this summer. Trust me, you will too once you try it 😉
