Roasted Tomato Margarita Pizza & Gilmore Girls Premiere Round Up!

The day we’ve all been waiting for (for yearssss I might add) is finally just ONE WEEK away: the season premier of Gilmore Girls on Netflix!!!

I literally have been waiting for this day to arrive since that fateful day in 2007 when Season 7 ended — which also happened to be the year I graduated high school, so guess who feels pretty darn OLD right about now???

This girl.

Gilmore girls was my JAM back in high school. Of course I owned the complete season DVD collection, so it was not uncommon to find me binge watching episodes with my best friends on Sundays (while pounding an obscene amount of junk food— because I was a less than healthy teenager). I adored Lorelai and Rory—  their witty banter, the hilarious characters in their lives, their amazing mother-daughter relationship, their pop-culture references— they were truly such lovable, relatable characters, especially to my 14-year-old-self.

And that love has not faded one bit, even 13 years later!

I think the reason I adore Gilmore Girls so much is that I feel like I grew up with the show—- the timing was absolutely spot-on for my generation. We experienced high school with Rory, went off to college with her, and went through the same ups and downs of early adulthood. We had heated debates over which boy Rory was meant to end up with (#teamjess y’all), waited patiently for Lorelai and Luke to finally end up together, and talked endlessly about the lack of closure at the end of season 7. We loved Melissa McCarthy before her Bridesmaids days, and will always remember her as Sookie in our hearts. This was our show. And how cool is it that we get to experience it all over again so many years later?!?

So of course my six best blogging buddies and I teamed up today to bring you a full viewing party spread, complete with snacks, appetizers, big bites, and a festive drink to enjoy as you binge watch the ENTIRE year in the life. Because we adore this show (and you all) so very much!

My addition to this Gilmore Girls inspired menu is none another than the quintessential Lorelai and Rori Gilmore anytime food: PIZZA. But not just any pizza. Roasted Tomato Margarita Pizza, complete with homemade bubbly roasted tomato sauce, fresh mozzarella, tender, crispy crust, and lots of basil!

I think the Gilmore girls would be proud (and probably call me an overachiever since they would have just ordered take out).

This pizza also happens to be SUPER easy to make—which was strategically planned to allow for as much TV binging as possible. The roasted tomato sauce takes all of 30 minutes to make, almost all of which involves the tomatoes roasting away in the oven. I used a store-bought pizza crust from Trader Joe’s for the base, so once you roll that out, you just throw on some sauce, cheese, and you’re ready to bake! Finish the whole pizza off with some fresh basil then you’re ready to PARTY!

Hi, I’m Liz and this is my food blog where I share my love of healthy foods and whole ingredients. You will find mostly vegetarian dishes, plenty of sweets, and lots of love from this little kitchen in Durham, North Carolina!

  1. It can’t get any more Gilmores-y than pizza, looove it! Ahhh. So stoked for the revival. I think I might be waking up in the middle of the night to watch it as soon as it comes out 🙂

  2. OMG BEST ROUND UP EVER!! So fun! I can’t even contain my excitement, I can’t believe it’s only a week away. It’s going to be so hard not to watch all 4 in one night. I want to make them last as long as they can, but I also don’t want anyone to spoil anything for me…. DILEMMA.
Thissss pizza also looks bomb <3

    • OMG right?!? It’s going to be so hard not to just binge in one sitting! Thanks so much Leah!

  3. I LOVE that you all made Gilmore Girls inspired recipes for the “Year in the Life” premiere! I watched GG in high school too (but on Netflix) and adored it. It’s actually my favorite show ever! There’s just something special about Star’s Hollow and the characters in it.
I have to say though, I was a fan of Rory and Logan. Not when they first started dating, but I really liked them together by season 7. My favorite couple though will always be Luke and Lorelai (may they PLEASE get back together).
I love that you made a pizza for this spin off- Lorelai and Rory would love it, and Sookie and Jackson would love you for getting the girls to eat some vegetables!
    Does Nate watch GG?

    • I’m so glad you’re as obsessed as I am! Yeah I am a pretty big Logan fan myself, but there is just something about Jess 😉 Unfortunately, Nate is not Gilmore Girls biggest fan— he thinks they talk too fast LOL!

  4. Fast to prepare so there’s more time to watch Gilmore Girls? I like the way you think. Can I come over for pizza and the best show ever finally being on again next Friday?!
Two more weeks for me, though, as I don’t have a Netflix account and will get one for December only. I can. not. wait.

    • Come on over girl!! That is going to be SO hard waiting— just basically turn off all social media for a week so you get NO spoilers lol 😉

    • I knew it had to be done lol! Classic pizzas are the BEST— especially when amped up with roasted tomato sauce! Thanks so much Becca 🙂

  5. Liz, I love this! So simple and delicious looking, I definitely think Rory and Lorelai would approve 😉 It is so cool that you grew up with the show! I actually only started watching it two years ago, but fell completely in love. Thank you so much for doing this with me, it was a blast! <3

    • Of course, it was SO much fun! Seriously can’t wait for next Friday!!

  6. Love love love this, Liz! Margarita pizza = the best. Always 🙂 So happy to be able to do this roundup with you! Can’t wait to chat about all-things Gilmore soon!

  7. Ahhh this pizza looks so good!! I love how simple it is – simple is definitely the best sometimes. And pizza is also the ultimate Netflix-watching food! I can’t believe GG ended 13 years ago – I’m feeling so old!

    • Thanks Rebecca! Omg right– I can’t believe that was 13 years ago! Feeling VERY old!
