I’m gonna be honest with you, for a while, I was struggling with getting enough veggies in my day— especially with a busy schedule and early mornings out the door. My routine breakfast always consists of oatmeal (aka no veggies), so lunch and dinner were left as my main sources of vegetables throughout the day. Dinners— yeah, I’m pretty good as getting a good 2-3 servings in, but lunches were not quite on par with where they should be.

I’ve always been a leftovers person, bringing last night’s dinner to work, but that didn’t always mean a veggie-loaded lunch. A lot of times that meant a hefty serving of last night’s pasta with the few remaining veggies scattered throughout. It was sad. I was left feeling tired, full, and honestly, not energized to teach my busy first graders for 4 more hours. Something had to change.

Enter: the veggie bowl! Veggie bowl, macro bowl, buddha bowl, power bowl… whatever you so choose to call it! It’s been my god-sent over the past few months, helping me increase my daily veggie intake in an easy to prepare, delicious way. My new year’s resolution was to have at least 3 different vegetables in each of my lunches, so these bowls were the perfect gateway to achieving my goal.

So what do my lunches look like nowadays? They still include some leftovers, typically the base being the leftover grain from dinner the night before (brown rice, quinoa, brown rice pasta, whole wheat couscous, etc), topped with 3 different veggies (some of which may also be leftovers from dinner), a protein (beans, nuts, seeds), and some sort of healthy fat or sauce (avocado, peanut sauce, or my favorite ginger miso dressing).

It’s amazing how much more energized I’ve felt with all these added plants in my day! Even better, my body has been SO healthy over the past 2 months (even with all the colds and flus going around my classroom)— knock on wood! That’s definitely something to feel good about.   1. Oh man, these veggie bowls look so good! I’ve been feeling veggie-deprived lately because I have a pregnancy aversion to salads which makes it hard to get enough veggies but these bowls look perfect!
