With all the cookies and holiday treats we’ve been baking (and consuming) over the past few weeks, it’s about time we get some greens in the mix. I recently re-made this Winter Massaged Kale Bowl, an oldie but goodie recipe from my blog, and it reminded me how much I adore massaged kale. I’m honestly not a huge kale fan, but there is just something about the way these greens get so tender and flavorful when you simply massage them with some olive oil and spices. Mmmhhh! Who knew?!?
To make these tender greens a little more festive, I decided to throw in my favorite winter fruit (seed? meh, both)… POMEGRANATE!! I swear, I could eat pomegranate seeds by the pound. They’re so sweet and tart and juicy and pop-able. I think we could basically call them candy, there’s so addictive.
Best of all, pomegranate seeds taste incredible on salads. That pop of sweet and tart goes with just about any kind of green and adds that perfect crunchy element. I also added on some nutty quinoa, chopped pecans, and creamy avocado, all mixed together with a rich balsamic vinaigrette. Mmmm eating those greens seems pretty easy now!
Since this salad is totally festive— I mean just look at those colors— it would also make a great side dish for your holiday table! Who are we kidding, we always need more healthy, nutritious dishes on our Christmas menu to balance out that cookie intake, so why not add on a fun and flavorful kale salad? I swear, that mix of creamy, nutty, sweet, and tart will impress everyone at your table (well…. the adults at least 😉 ).
