I may be the only person in the entire world to say this, but I totally think that crisps trump pies. Yeah, I just said it. There’s just something about that crunchy, oat-y, buttery topping over warm tender fruit that makes me so entirely happy inside. And with a big ol’ scoop of vanilla ice cream melting and dripping and mixing with all those warm flavors— yup, it’s pretty fantastic.
Fantastic enough to be better than pie. Sorry, not sorry 😉
Last year, when I made this Rustic Coconut Apple Crisp, I told you about my first love for crisps: my mom’s warm, comforting, perfectly sweet and buttery Oatmeal Apple Crisp. I don’t know what it is about that crisp, but it is PERFECT. The whole house instantly knew she was baking it from that beautiful, cinnamon-y (yes, that’s now a word in my vocabulary) aroma that filled the kitchen the moment she put it into the oven. And once we got to eating, there was just no stopping us. I swear that huge double batch was almost gone by the end of our evening. Along with a half gallon of vanilla ice cream. Figures.
Best of all, my mom and I would always sit at the kitchen table afterwards, spooning ourselves more ice cream—- since it was all melty and creamy and delicious from sitting out (aka my favorite form of ice cream)— and chatting for hours upon hours with a big steamy cup of tea. Maybe that’s why I like that crisp so much. ALL the memories.
Now today, I’ve put a twist on your traditional apple crisp, not only making it vegan with coconut oil, but also adding in my most favorite ingredient in the whole wide world…. PEANUT BUTTER! I’m so predictable.
But believe me when I say this was one of the best on-the-fly ideas I’ve had in a while. Upon first bite, it tasted like a mix between a peanut butter cookie and a baked oatmeal crumbled on top of tender, cinnamon apples. That warm, nutty flavor paired with the sweetness of the apples is unbelievable. And the way it mixes with that creamy vanilla bean ice cream—- ohh I’m ready to curl up on the couch with a pan of this right now!
Don’t worry mom, I still like yours better, but I think we have a close contender on the books now 😉
