Peanut Butter Coconut Macaroons {vegan}


Today I’m so excited to be reviewing a brand new e-book, Vegan Peanut Butter Desserts, created by Jenny Dunklee of The Lazy Vegan Baker! When Jenny first approached me about the review, I was totally flattered and instantly in love with her concept (duhhh, peanut butter and dessert. i’m sold).

As soon as I had the book downloaded on my kindle, I sat there debating for a solid 20 minutes over which recipe to try first. Silken Peanut Butter Pie, Pumpkin Peanut Butter Chocolate Chip Bread, Apple Peanut Butter Crisp— there were just too many mouth-watering options. Plus, the e-book is set up in a very user friendly way, with beautiful photos, clear directions, and tips throughout each page. It can be downloaded on your kindle or iPad, too, which makes it super portable in your kitchen!

I settled on Jenny’s Peanut Butter Coconut Macaroons because I absolutely love coconut (and peanut butter, of course) and I was intrigued since they were also gluten free. This recipe was SUPER simple to throw together and took a grand total of 20 minutes to make (bake time included). Jenny’s directions were extremely clear and easy to follow— which made life that much easier in the kitchen that day.

I decided to drizzle my macaroons with melted dark chocolate, then stick them in the freezer to harden. SUCHHH a good idea. After they hardened, I pulled them out, thawed for a few minutes, then we ate our face off! These macaroons simply melt in your mouth. They’re soft, creamy, perfectly sweet, and have that POP of peanut butter that takes these macaroons to a whole new level. I seriously can’t wait to make them again for my family— seeing as they adore coconut as much as this household does.

Peanut Butter Coconut Macaroons {gluten free}

  • 1/3 cup gluten free flour (I used oat flour)
  • 2 1/2 cups unsweetened shredded coconut flakes
  • 1/2 cup all natural peanut butter
  • 3/4 cups full fat coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dark brown sugar (I used coconut sugar)
  • 1/2 teaspoon salt (omit if peanut butter has salt in it)
  • optional: melted dark chocolate


Step 1
Preheat oven to 350 degree F. Line a baking sheet with parchment paper or spray lightly with oil.
Step 2
In a large bowl, mix together coconut milk, peanut butter, vanilla, sugar, and salt. Stir in the coconut and flour and mix until combined.
Step 3
Scoop tablespoons of batter onto a prepared baking sheet (or use a cookie scoop) and bake for 10-12 minutes.
Step 4
Can be stored in an airtight container at room temperature for up to 5 days.

  2. What’s my favorite thing to make with peanut butter? Do I have to choose just one?! haha
    I LOVE my Thai Peanut Sauce, but I lovelovelove peanut butter in sweets, too. Hello, Banana Nut Muffins + peanut butter!

  3. I prefer peanut butter in savories like Isa’s pantry BBQ sauce, but I also love to make buckeyes for my boyfriend’s favorite treat!

  4. Those macarons really sounds great!
    I’ve been weirdly craving peanut butter a lot lately. I loved making peanut butter and coconut oil fudge (recipe in my blog), and I also love it in smoothies and on toast with banana. :p
