Friday Favorites

Happy Friday! I am almost completely in summer mode now. Almost, but not quite. I officially have 4 days left of school, well after today, so in teacher lingo that basically means 4 days of professional babysitting. Oh, and packing up the classroom. And I strangely love packing up and reorganizing my classroom, so this time of year is always extra fun for me.

This is also my last week in Durham for the summer since we’ll be moving back to DC for a few months for Nate’s internship. I’ve basically been in DC mode since we locked down our apartment a few weeks ago and am so excited to be back “home”. So many things to look forward to and one short week to conquer. Let’s do it!

But not without some delicious food. That goes without saying. Here are some favorites from the past two weeks. Bloggers, you’ve outdone yourselves, as usual!

this is an oldie, but it is seriously the mother of all baked oatmeal casseroles

and these carrot cake overnight oats? i can’t even.

pineapple guacamole? i love it. and i’m making it pronto.

I have been eating pistachios by the bagful lately, so of course I want to try this pistachio hummus
