About Me



Hi, I’m Liz and welcome to my blog, Pumpkin + Peanut Butter! I’m beyond excited that you’ve stopped by!

At little bit about me— I’m a twenty-something elementary school teacher currently living in the Washington D.C. area. This little blog began as a creative outlet back in the fall of 2014. My husband was in law school at the time and I was teaching 1st grade, but there was just something missing. I was craving a little more creativity in my life, and I already had a passion for cooking, so naturally, this blog was born!


Three years later, I’ve fallen in love with recipe development, photography, and sharing my take on healthy living with all you amazing readers out there. It’s because of you guys that this blog is still going strong, and I want to thank you for all your comments, kind words, and feedback on my recipes!


In my free time, you’ll find me cooking (duh), doing yoga, traveling (or planning my next getaway), playing with my 8-pound ball of fur, Augie, and hanging with my wonderful husband Nate. Nate and I tied the knot back in 2016, so check out some details from our wedding under the lifestyle tab, including our engagement story and our wedding updates. Also, we recently found out we’re EXPECTING our first child in June 2018! Stay tuned for more to come 🙂



I’m so excited that you’ve stopped by to share in my culinary adventures! My relationship with food is as follows: eat healthy food, eat delicious food, and eat what your body tells you it needs. I eat a {mostly} plant based diet, focusing on the use of natural ingredients, whole grains, and plenty of fruits and veggies in my recipes. While I’m not a strict vegetarian, I cook mainly vegetarian and vegan dishes because that’s what my body enjoys the most!


When it comes down to it, above all, I believe in balance—- balance in the ways we nourish ourselves, the ways we stay active, and the ways we achieve happiness each and every day.  I hope you find some things you like and can take back to your kitchen, wherever it may be.

    • Hey Kaylin!! YESSSS I have a rose gold engagement ring and I love it so so much! I had actually pinned the exact ring on Pinterest and was so surprised when he gave me almost an identical one! I MUST check out yours 😉
