How is it almost the middle of July ALREADY?? Seriously, who is in charge of making this summer go by SO freakin fast this year?

I probably say that every year, but this one feels especially speedy. Speedy, yet absolutely wonderful.

If you follow me on Instagram, you already know I’ve been a little bit all over the place these past few weeks. Between weddings, a bachelorette trip, and house hunting for the big move, I feel like I’ve been home for .25 seconds since school let out in mid-June. As a person who loves both traveling and staying busy, this is kinda my dream summer. But it also means time is flying by and I have to remind myself to stop every once in awhile to a. rest and b. soak in all the wonderful memories we’ve been making.

So let’s all slowwww down for a few minutes and talk about summery things like peach crisp. And not just any peach crisp, Vegan STRAWBERRY Peach Crisp. It sure doesn’t get much more summery than that!

This recipe is actually adapted from a super old recipe from this blog, this Rustic Coconut Apple Crisp. This original recipe is still a favorite of mine to this day and I make it ALL the time during the holiday season.

I just adore this crispy, crunchy, crumbly oat topping that mixes with the fruit so beautifully. It’s also super easy to make— almost TOO easy— so that’s always a plus. And to top it off, it’s naturally gluten free, dairy free, and only has 2 tablespoons of coconut sugar in the whole thing. So let’s chalk all that up to a major WIN.

This time, I decided to use my two favorite summer fruits, strawberries and peaches, to brighten up the dish. BOY is this an amazing fruit combination! Those sweet, juicy peaches melded with those bright, tart strawberries into this dreamy skillet of deliciousness.

Topped with that crumbly oat topping and some creamy, melty vanilla ice cream, I was in fruit crisp heaven.

Ohh and this crispy oat topping! I can’t forget to tell you about that. I use a combination of some of my favorite Bob’s Red Mill products (their old fashioned oats and super fine almond flour) as well as some thick cut coconut, sliced almonds, and coconut sugar. The dry ingredients are mixed together with a couple tablespoons of melted coconut oil and it turns into this crispy, crunchy, perfectly sweet oat topping!

So if you’re in need of a little mid-summer slowness like I am, whip up a skillet of this Strawberry Peach Crisp, sit on the porch, and just take in this beautiful time. I sure know I’m going to be doing A LOT of that this week 🙂

Vegan Strawberry Peach Crisp

Serves 6-8
Prep time 10 minutes
Cook time 35 minutes
Total time 45 minutes

Ingredients

  • 2 cups fresh strawberries, sliced
  • 3 peaches, sliced
  • 1/2 cup old fashioned oats
  • 1/2 cup sliced almonds
  • 1/4 cup almond flour
  • 1/4 cup shredded coconut (I used the thick cut kind)
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut sugar
  • pinch of salt
  • 1/4 cup melted coconut oil

Directions

Step 1
Preheat the oven to 350 degrees.
Step 2
Place sliced strawberries and peaches in a medium sized cast iron skillet. Spread the fruit slices out so that they cover the bottom of the skillet and are layered evenly.
Step 3
In a mixing bowl, combine oats, slivered almonds, almond flour, shredded coconut, coconut sugar, cinnamon, and salt. Once they are stirred together, add in the coconut oil and mix until all the ingredents are coated.
Step 4
Top the strawberries and peaches with the coconut oat crumble. I used my fingers so that every part of the skillet gets an even amount. Bake for 35-40 minutes, or until fruit is juicy and the crumble is golden. Top with whipped cream or vanilla ice cream, dairy free if needed.
