Mango Ginger Green Smoothie with Dorot!

This summer weather has me craving ALL the smoothies and I cannot STOP!

Honestly, during the fall and winter months, I kind of fall off the smoothie bandwagon almost entirely. I am totally one of those people whose diet ebbs and flows with the weather. Give me a warm bowl of oatmeal every day when it’s below 40 degrees outside!

But as soon as spring hits, I am back in smoothie action full force. And this summer, it has hit me hard!

 

 

One smoothie in particular has had me fall head over heals in LOVE.

You guessed it, it’s this one 😉

But of course there’s a story behind it and of course I’m going to share it with you right now!

So this spring I started going to a new yoga studio in Durham that just so happens to be in the back of this adorable salad and smoothie shop right downtown. And obviously it didn’t take long before I got into the yoga-smoothie routine whenever I was heading to class.

So on one occasion, I got to chatting with one of the employees (about smoothies of course) and he told me of this “secret smoothie” they had “off menu” that just so happened to be his favorite one. Ahem, secret smoothie? Now you have my attention. Next thing I knew, he was mixing up samples and telling me how amazing this ginger-lemon-spinach combo was. It sounded kinda funky to me, but I played along and gave it a try.

WOW. That zesty, bright lemon juice, that mild sweetness from the banana and mango, that bite from the ginger— it was unlike any smoothie I had ever tasted but it was SO SO good!

 

 

Well, you know what’s coming next. I just HAD to recreate this magical “secret” smoothie at home (mostly so I didn’t blow all my money on smoothies every day). And that’s exactly what I did, with the help of my favorite Dorot crushed ginger.

I’ve partnered with Dorot a few times in the past (check out this soup and this ramen) and I’ve told you guys how much I adore their products. For those of you who haven’t heard of them, Dorot makes a variety of pre-portioned fresh herbs, garlic, ginger, and glazed onions that are frozen within 90 minutes of harvest (!!!!! right?!?) and have a full year shelf life. They have become absolute staples in my freezer for quick meals, when I’m feeling lazy, or when I need herbs in a pinch and don’t have any fresh ones on hand.

Anyways, back to this smoothie, I started with a little frozen banana and a heaping cup of frozen mango. I don’t work with mango very often, but I love how it adds such a light, refreshing sweetness to drinks and it’s too overpowering. Sorry mango, you’re not destined to be the star of this show.

Next I added in lots of fresh spinach, juice of a WHOLE juicy lemon, almond milk, and 2 Dorot ginger cubes. Instead of having to microplane 2 teaspoons of ginger, which I would normally do, this took all of 2 seconds to pop them out of the container and into my blender. My kind of time-saver!

 

 

Once I blended this baby up, I was absolutely blown away by the creamy, refreshing, tangy taste these ingredients had created. Not to mention how healthy it was! We all know that green smoothies are good for you, but that addition of the lemon juice and ginger adds SO much nutrition for your gut, which I’m always (strangely) excited about!

If you’re interested in trying Dorot products, I get my herbs at my local Whole Foods and Trader Joe’s in the freezer aisle. Dorot products not only make my cooking so much quicker and easier, but they add so much flavor! This was my first time using their crushed ginger and I was blown away by the zest it added to this smoothie. All I needed were two little frozen ginger cubes to take this smoothie to the next level— and I’m totally hooked now.

Mango Ginger Green Smoothie

Serves 1-2
Prep time 5 minutes
Dietary Gluten Free, Vegan
Meal type Beverage

Ingredients

  • 1 large handful of spinach leaves
  • 1 Large banana, chopped and frozen
  • 1 cup frozen mango chunks
  • 1 cup milk of choice (I used almond)
  • juice of 1 FULL lemon
  • 2 cubes of frozen ginger or 2 tbsp freshly grated ginger

Directions

Step 1
Place spinach, banana chunks, mango chunks, ginger, and lemon juice into a high speed blender. Pour in about half the milk and begin to puree.
Step 2
Stir and pour in the rest of the milk, then finish blending until smooth. *You may want to add a little more or a little less milk depending on the smoothie consistency you prefer!

  1. I LOVE the convenience of those ginger cubes! Especially because I never seem to have fresh ginger on hand and the powdered stuff just DOESN’T compare!! I’ve been craving blueberry/almond butter smoothies lately – I’m totally a seasonal eater, too! Give me allll the fresh salads and smoothies for summer!

    • I totally agree— I barely even use the powdered stuff anymore, EVEN in baked goods! Ohh that blueberry almond butter combo sounds seriously delicious! I may just have to try that one soon 🙂

  2. This smoothie looks so good! Love how green it is, but it still looks so creamy – not always a given with green smoothies! Those ginger cubes look so convenient too! I will definitely be giving this s try!
