Cucumber Lemon French 75

Hi friends! We’re celebrating so many wonderful things today on pumpkin & pb, so of course there must be Prosecco involved!

And what are we celebrating? Well, upcoming Mother’s Day, of course, but also a huge milestone in my family’s life— my husband is graduating from law school this Saturday!

You guys, this celebration has been three years in the making. Three years filled with a scary, but exciting move, amazing new friends, a challenging job, a BLOG (yes this one 😉 ), laughs, tears, and so many in-betweens. But let’s put that on hold for a few minutes, and first, talk about some lovely women in my life (and all you moms out there).

 

I’ve told you all before how very lucky I am to have such an incredible mother. She honestly is the definition of a super mom. She raised four children and dedicated her life to them (and still does), started her own successful business from the ground up, taught us how to be financially independent (she’s originally an accountant– so there’s that) and to follow our passions, and modeled how to make healthy choices (aka why I eat like I do today). I could go on and on! She’s amazing!

And since Nate and I are newly married (it’ll be 7 months now! what?!), this is the first year I’ll be celebrating Mother’s Day with a second mom— my new mother-in-law! Again, I don’t know how I got so lucky. Nate’s mom has welcomed me into the family with open arms and has been like a second mom to me for years. I honestly don’t know anyone who is more kind or selfless. And best of all, she and my mom get along SO GREAT (which I know is hard to find with mothers and mother-in-laws)!

Since both our moms are in town for graduation, we’re hosting the whole family over at our apartment for a Mother’s Day brunch. And what better way to celebrate than with these fresh, light Cucumber Lemon French 75s?

 

 

For these Cucumber Lemon French 75s, I used this delicious VOVETI Prosecco. I’m always on the lookout for a flavorful and balanced, yet dry prosecco (since I’m not into super sweet cocktails) and this one totally fits the bill!

VOVETI Prosecco is a dry brut that features flavors of pear, green apple, melon and ripe peach, so it pairs nicely with just about anything. It’s crafted from 100% Prosecco (Glera grapes), and its tempered acidity and fresh, graceful profile stay on your palate and make it so enjoyable to drink.

I switched up your traditional French 75 by substituting cucumber gin (my absolute favorite), a fresh swirled cucumber, lemon juice, and topped it all off with some bubbly VOVETI. Typically there is simple syrup in a traditional French 75, but I’m not into super sweet cocktails so I omitted it (but you can totally add it back in if desired). This drink is perfect for a Mother’s Day brunch, nights out with the girls, or honestly, a beautiful summer day by the pool. It’s so light and fresh and bubbly— it just makes me feel like celebrating!

 

 

So onto our next celebration, my husband’s law school graduation! Sorry guys, I feel like I’m just pouring out compliments to all the amazing people in my life in this post, but since we’re drinking prosecco and all, why not?!?

If anyone knows my husband, they know what a dedicated, hard-working soul he is. When he has a goal in front of him, Nate literally pours himself it with a work-ethic I could only dream of having. Seriously guys, he is incredible. These past three years have been intense, grueling, emotional, and at times, very long, but he’s finally reached the end— stronger than ever— and he’ll be starting work at an amazing law firm this fall in Washington DC!

I am SO extremely proud of this man! So today, we’re cheers-ing to him for surviving law school and coming out better than ever! I love you Nate 🙂

Cucumber Lemon French 75

Ingredients

  • slice of shaved cucumber
  • VOVETI Prosecco, to top off glass
  • garnish: lemon peel
  • 1.5oz cucumber gin
  • 1oz fresh squeezed lemon juice

Directions

Step 1
Use a vegetable peeler or paring knife to shave off a thin slice of cucumber. Swirl the cucumber around your champagne glass and press it against the side of the glass (it will naturally stick).
Step 2
Pour 1.5 ounces of cucumber gin in the glass. Next, add in 1 ounce of freshly squeezed lemon juice. Finish the glass off with a pour of VOVETI Prosecco to the top and garnish with lemon peel. Enjoy!
