Gluten Free Caramel Apple Oatmeal Cookies

 

I know what you’re thinking. Caramel apple oatmeal cookies?? In the middle of spring??

Yes, I realize I am totally like two seasons early… or late, depending on how we’re going to look at it… but I promise you these cookies are absolutely worth overlooking that minor detail.

But I promise we’ll get to them in a few minutes. First things first, let’s talk the weekend!

 

 

How was your weekend?? It was absolutely beautiful here in North Carolina so I totally took advantage of the gorgeous weather and had a ridiculously productive day on Saturday. Man it felt good! I ran lots of errands, did a little blog work, squeezed in a yoga class, cleaned my apartment, and we hosted all our friends over at our apartment before my husband’s last law school formal (seriously cannot even believe he’s graduating in a month!) We made these Grapefruit Cucumber Gin Cocktails and everyone was totally raving about them…. sooo basically you should go whip one up, like, immediately 😉

We had an absolute blast at the formal, maybe a little too much fun if you know what I mean, so the theme of Sunday was basically veg on the couch and finish binge watching Big Little Lies. And I couldn’t have been happier about that. Everyone needs a lazy Sunday once in a while, am I right??

Speaking of which, have you watched Big Little Lies yet?!? If you haven’t, you must start it! The cast is incredible, the soundtrack is one of the best things ever, and we literally can’t stop talking about it!

 

 

Whew, enough about the weekend. Let’s talk cookies!

So these cookies have been on my list to make since, well, October, but naturally I waited until March to start experimenting with a fall-inspired cookie! These cookies are entirely gluten free and are made with a combination of Bob’s Red Mill’s Gluten Free 1:1 Baking Flour and quick oats. I packed in lots of crisp, crunchy apple chunks, plenty of warm cinnamon, and these perfect caramel baking chips that add the best pop of sweetness.

The result— these soft and chewy, perfectly sweet Caramel Apple Oatmeal Cookies! I swear, they are one of my favorite cookies I’ve EVER made. And that’s saying something, especially because they don’t contain a lick of chocolate or peanut butter!

Gluten Free Caramel Apple Oatmeal Cookies

Serves 12-15
Prep time 10 minutes
Cook time 11 minutes
Total time 21 minutes

Ingredients

  • 1 cup quick oats (or pulse 1 cup of old fashioned oats a few times in food processor)
  • 3/4 cups gluten free flour*
  • 1 1/2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • pinch of salt
  • 1/4 cup coconut oil, melted and cooled
  • 1 egg, room temperature**
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup or honey
  • 1/4 cup apple, peeled and chopped into 1/4'' pieces
  • 1/4 cup caramel chips or chunks***

Note

*I used Bob's Red Mill Gluten Free 1:1 Baking Flour.

**I haven't tried a flax egg yet, but it should work well in this recipe.

***I used Ghirardelli's Caramel Baking Chips, but if you are dairy free, try the King David brand.

Directions

Step 1
Preheat oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.
Step 2
Mix dry ingredients together in a large bowl: oats, gluten free flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together wet ingredients: egg, coconut oil, maple syrup or honey, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
Step 3
Add in apple chunks and caramel chips and stir to evenly mix. Use a cookie scoop to drop cookie dough onto parchment paper, and press down a little bit with your fingers. Bake for 11-13 minutes. Let cookies cool for 5 minutes on baking sheet, then move to a wire rack to continue cooling for 10-15 minutes.

    And who cares if apples and caramel are meant for fall. These look good enough to eat all year long!
