Banh Mi Avocado Toast


Is there really anything better than some trashed up avocado toast to brighten up your Wednesday?!?

Nope. (sorry, I took the liberty of answering for you 😉 )

AND better yet, it’s trashed up in the BEST way possible— banh mi style! Anyone else a banh mi fan out there?? I’m going to be honest here, my first time having a banh mi was my bachelorette weekend in Austin, which was sadly not that long ago, but I’ve been in love with them every since. Who are we kidding, anything sandwiched between two thick, crusty pieces of vietnamese baguette is bound to be amazing. So my banh mi love began and thus, this toast was born!



Like all good avocados toasts out there, you have to start with some quality bread. I recommend sourdough, because it’s my personal favorite, but feel free to use whatever kind you prefer (or gluten free, if needed). Next slice and layer that perfect half an avocado on each piece, followed by a few slices of fresh cucumber.

Now comes my favorite part— the pickles! On Monday, I shared these super easy Vietnamese Quick Pickles with you guys and they just so happen to be the star of today’s recipe as well. I would definitely make a batch of these the night before you want this toast, BUT if you instantly get a huge banh mi craving and need to make this whole recipe immediately, I totally understand. They’re definitely best pickling overnight, but I think the pickles would be eatable after soaking for about an hour. Just sayin’.

Anyways, top your toast with a hefty finger-full of these perfect little pickles and a dusting of sesame seeds, because it just looks so darn pretty. You can totally add some fresh cilantro too— sadly, I was out, but I definitely will next time.

Voila! Banh mi style avocado toast in a matter of minutes!

Now if only I would wake up and it was magically Saturday morning in a house full of ripe avocados 😉


Banh Mi Avocado Toast

  • 2 pieces sourdough bread (or bread of choice)
  • 1 avocado, halved and sliced
  • 6 slices of cucumber
  • 1/2 cup vietnamese quick pickles*
  • sprinkle of sesame seeds


*I used my recipe for Vietnamese Quick Pickles for this dish


Step 1
Toast your bread of choice and top with sliced avocado. Add 3 slices of cucumber, a handful of Vietnamese Quick Pickles* and a sprinkle of sesame seeds!
