Ahhhh fall, you beautiful season, you! The colorful trees, the cozy sweaters, the warming drinks, the comforting flavors— I think there’s a pretty good reason 99% of us are absolutely obsessed with you.
With all the craziness that also comes with this time of the year, I’m trying to take a step back and just enjoy those natural comforts of autumn. After my eventful days at work, I’m finding my afternoon walks with my puppy, Augie, to be more and more soothing as I just clear my mind and notice the beauty around me. It sounds super cheesy— but I swear, it works. Just stopping for a moment to take notice and be grateful makes my other worries seems so much more distant.
Of course my favorite fall comfort is, well, the FOOD. Cooking has always been a de-stressor for me, but it especially is this time of year, thanks to all that holiday baking 🙂
In honor of these seasonal comforts, I decided to throw together a round up of all my favorite fall recipes to share with you today. Some are newer obsessions that you may recognize from the past few months, while others are old stand-bys that I posted a year or two ago but still adore.
Let’s start with some breakfast, shall we!
These Toasted Coconut Pumpkin Spice Donuts are one of my newest breakfast recipes and I know will be a favorite for quite a while. Tender whole grain pumpkin spice donuts topped with a sweet glaze and crunchy toasted shredded coconut— yeah, get on that now!
These Pumpkin Peanut Butter Coconut Flour Pancakes are an oldie but a goodie. I actually made them for my first year blog anniversary last year and make them all year long because they’re THAT good. These pancakes are made with coconut flour so they’re naturally gluten free and super moist!
This Roasted Butternut Couscous Salad is another recipe from this time last year but it’s quickly become a seasonal repeat. Fresh arugula, roasted butternut, tender whole wheat couscous, crunchy asparagus, and a tangy vinaigrette— perfect for your Thanksgiving table or just any day of the week!
This Autumn Lentil Veggie Soup is another old classic. It was actually one of the first recipes I posted on the blog 2 years ago! I make this soup at least once a month because it’s SO easy, SO healthy, and SO delicious.
This Cauliflower Leek Soup with Crispy Brussels Sprouts is a recipe that I actually forgot about until I started creating this round up! Whoops! But I promise you it’s worth remembering. Creamy cauliflower and potato based soup topped with crispy brussels sprouts and cauliflower florets. Comfort food at it’s finest— and healthiest! (ps it’s naturally vegan and gluten free)
This Autumn Vegetable Paella is one of my newest recipes on the blog and it’s quickly becoming one of my most POPULAR! I love this dish because it combines all those warming fall flavors with those bright, vibrant Spanish spices. Such a unique dish that I know you guys will LOVE.
This Lentil Loaf with Creamy Cauliflower Mash is still one of my most made recipes on this blog, even though it’s almost 2 years old! I love making this lentil loaf on Sunday afternoons and putting it in the fridge for a busy weeknight. It’s packed with protein, whole grains, veggies, and flavor!
This Creamy Garlic & Leek Autumn Pasta is full of all my favorite fall veggies and is topped with a luscious, creamy sauce that’s naturally vegan and gluten free! I always use brown rice pasta as my base for this dish, adding in lots of whole grains and protein.
This Vegan Peanut Butter Apple Crisp is a repeat offender in my house. I make it at least 4 times during the fall season because it is so darn easy to make! It’s best topped with creamy, melty vanilla ice cream 🙂
These Vegan Pumpkin Oatmeal Streusel Bars are another new dessert from this season that I’m absolutely loving. Nate has already requested them for Thanksgiving instead of pumpkin pie— so you know they’re a big deal when pumpkin pie is going out the window!
