Gluten Free Peanut Butter Blossoms

It’s officially November, so you know what that means— holiday baking is in full swing!!

Between Thanksgiving in just a few weeks and Christmas right around the corner afterwards, I’m already going through my list of recipe ideas and getting seriously giddy at the thought of all this baking.

Well that, and it finally being socially appropriate to play holiday music LOL!

First on my list this season was making a gluten free version of one of my very favorite holiday cookies: Peanut Butter Blossoms. Soft, tender peanut butter cookies with a creamy, melty peanut butter cup smack dab in the middle— does it really get much better than that?

Nope!

Baking these cookies brought back so many wonderful memories of holiday baking with my mom throughout my childhood. Every year, we had a running list of all our favorite recipes: buckeyes, sugar cut-out cookies, molasses cookies, snickerdoodles— and you bet these babies always made the cut!

We’d spend our Sundays rolling and mixing and baking and decorating—- Christmas music blasting in the background and my mom and I singing away. It’s one of those memories that I get all warm and fuzzy thinking about every time this season rolls around. And making new versions of these classic favorites just makes those memories even more fun!

Whenever I’m making gluten free cookies, one of my go-to flours is always Bob’s Red Mill Super-Fine Almond Flour. Have you ever baked with almond flour before? I swear, this stuff is gluten free MAGIC.

Almond flour made from ground, whole blanched sweet almonds and is super easy to bake with. It’s not only packed with protein and healthy monounsaturated fats, but it also creates the most tender, moist cookie that literally melts in your mouth.

Add in a rich, creamy, melty peanut butter cup and we’re in gluten free cookie heaven! <— PS also a great way to use up all that Halloween candy we’re all rolling in right now 😉

Gluten Free Peanut Butter Blossoms

Serves 12-14
Prep time 20 minutes
Cook time 10 minutes
Total time 30 minutes

Ingredients

  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • pinch of salt
  • 1/4 cup coconut oil
  • 3 tablespoons natural peanut butter
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 12-14 peanut butter cups (use vegan if needed)

Directions

Step 1
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
Step 2
Mix dry ingredients together in a bowl and set aside: almond flour, coconut flour, baking soda, and salt. In a separate bowl whisk together wet ingredients: coconut oil, peanut butter, maple syrup, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
Step 3
Form dough into small 1 1/2'' circles and place on parchment lined baking sheet. Chill cookies for 10 minutes in refrigerator, then bake for 10-11 minutes. Remove from oven and immediately press one peanut butter cup into each cookies. Place cookies on a cooling rack to finish cooling.

  2. Ah, these pb cookies with pb cups look and sound AMAZING! I am a huge chocolate + pb fan so I will definitely be trying these reaaaal soon! I also love Bob’s Red Mill flours, especially their almond flour, so I have some on hand too! Can’t wait!!
