Double Chocolate Peanut Butter Cereal Bars

It’s Wednesday! And not just any Wednesday, but the Wednesday of the first week of school…. so I think its safe to say we’re in need of a little chocolate in our lives today!

Anyone else feel me? Oh thank goodness!

I am seriously SO SO excited about today’s post because it’s not only sponsored by one of my favorite brands, Annie’s, but it also features my very first step-by-step food video! Check it out:

So I know I’m a little late to the food blogger video game, but I’m so glad I finally jumped on board because this was so much fun to make! So fun, and so hilarious…

Hilarious, because the hands you see throughout the video belong to my fiancé Nate who… well… doesn’t dabble in the kitchen too often. So when I signed him up to be my hand model / sous chef, I had NO IDEA how it was going to turn out. Let’s just say there were lots of laughs, a few mishaps, and chocolate EVERYWHERE.

Let’s talk a little bit about how much I love Annie’s. Not only do their products taste amazing, but I love their mission of sharing natural and organic foods that use ingredients sourced in a sustainable manner. They also support community outreach by funding school gardens (right on, Annie’s!) and reducing environmental waste. So cool!

Today’s recipe features one of Annie’s certified organic cereals, Cocoa Bunnies— so cute, right?!? These babies are made with Fair Trade Cocoa, which helps provide sustainable income to farmers and their families, are packed with wholesome organic ingredients, and are totally delicious!

I decided to use these Certified Organic Cocoa Bunnies to make a delicious yet seriously easy back-to-school treat: cereal bars! My mom used to make us cereal bars all the time when we were growing up and they were such a fun treat to come home to after a long day at school.

So I decided to recreate these fun treats using a more wholesome cereal, a little peanut butter, and of course, dark chocolate. You guys won’t believe how simple this recipe is! Just mix the wet ingredients together, combine them together with the cereal, freeze and eat. Oh, but not before you drizzle them with lots of rich dark chocolate 🙂

I love having these treats on hand for a pick-me-up after school or to fulfill my nightly after dinner sweet-craving. Crispy, crunchy, perfectly sweet and totally addicting!

So if you’re in need of a little chocolate like I am today, I totally recommend you head to your local Target or Whole Foods for a box of these Organic Cocoa Bunnies! I promise they don’t disappoint 😉

Have a wonderful Wednesday everyone— we’re over the hump!

Prep time 1 hour, 15 minutes
Meal type Snack

  • 2 1/2 cups Annie's Organic Cocoa Bunnies (or cereal of choice)
  • 1/4 cup coconut oil, melted
  • 1/4 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chunks or chips
  • 1 teaspoon coconut oil

Pour 2 1/2 cups of Cocoa Bunnies cereal into a large bowl and set aside. In a small pot, melt coconut oil over low heat and stir in peanut butter and maple syrup. Pour the liquid ingredients into the bowl of cereal and stir to coat.
Step 2
Line an 8x8 baking dish with parchment paper. Pour the cereal mixture into the baking dish and smooth evenly with spatula. Freeze for 1 hour.
Step 3
Right before you take the cereal bars out of the freeze, melt dark chocolate with 1 tsp of coconut oil in the microwave. Only microwave for 20-30 seconds at a time, then remove, stir, and repeat until melted. Drizzle the dark chocolate over the cereal bars and freeze for 5 minutes (or until chocolate is hard). Slice and serve!

Hi, I’m Liz and this is my food blog where I share my love of healthy foods and whole ingredients. You will find mostly vegetarian dishes, plenty of sweets, and lots of love from this little kitchen in Durham, North Carolina!

  1. Wow. These look awesome. And hey Nate, if this lawyer thing doesn’t work out, you have a definite future in the hand model business.

    • Thanks Mitch! Yeah, I was pretty impressed with his skills. I think we need to team up more often in my photography shoots 😉

  2. Did Nate do the drizzle too?! Dude’s got skills!!! These look so delicious and I LOVE that bunny cereal! So cute!

    • Oh yes he did! Isn’t it so cute? And seriously addicting, of course 🙂

  3. I’ll have a batch now please. They look just delicious. And kudos to the hand model – a surgeon with a spoon!

    • Thanks Maya! It took a little research, but it was pretty easy to put together once I got the basics down 😉

    • Hmmm the ingredients seem to be gluten free, but it’s not certified gluten free. I wonder why not? That would be great!
