It’s Wednesday! And not just any Wednesday, but the Wednesday of the first week of school…. so I think its safe to say we’re in need of a little chocolate in our lives today!

So I know I’m a little late to the food blogger video game, but I’m so glad I finally jumped on board because this was so much fun to make! So fun, and so hilarious…

Hilarious, because the hands you see throughout the video belong to my fiancé Nate who… well… doesn’t dabble in the kitchen too often. So when I signed him up to be my hand model / sous chef, I had NO IDEA how it was going to turn out. Let’s just say there were lots of laughs, a few mishaps, and chocolate EVERYWHERE.

Let’s talk a little bit about how much I love Annie’s. I decided to use these Certified Organic Cocoa Bunnies to make a delicious yet seriously easy back-to-school treat: cereal bars! My mom used to make us cereal bars all the time when we were growing up and they were such a fun treat to come home to after a long day at school.

So I decided to recreate these fun treats using a more wholesome cereal, a little peanut butter, and of course, dark chocolate. You guys won’t believe how simple this recipe is! Just mix the wet ingredients together, combine them together with the cereal, freeze and eat. Oh, but not before you drizzle them with lots of rich dark chocolate 🙂

I love having these treats on hand for a pick-me-up after school or to fulfill my nightly after dinner sweet-craving. Crispy, crunchy, perfectly sweet and totally addicting!

Double Chocolate Peanut Butter Cereal Bars

Serves 8
Prep time 1 hour, 15 minutes
Meal type Snack

Ingredients

  • 2 1/2 cups Annie's Organic Cocoa Bunnies (or cereal of choice)
  • 1/4 cup coconut oil, melted
  • 1/4 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chunks or chips
  • 1 teaspoon coconut oil

Directions

Step 1
Pour 2 1/2 cups of Cocoa Bunnies cereal into a large bowl and set aside. In a small pot, melt coconut oil over low heat and stir in peanut butter and maple syrup. Pour the liquid ingredients into the bowl of cereal and stir to coat.
Step 2
Line an 8x8 baking dish with parchment paper. Pour the cereal mixture into the baking dish and smooth evenly with spatula. Freeze for 1 hour.
Step 3
Right before you take the cereal bars out of the freeze, melt dark chocolate with 1 tsp of coconut oil in the microwave. Only microwave for 20-30 seconds at a time, then remove, stir, and repeat until melted. Drizzle the dark chocolate over the cereal bars and freeze for 5 minutes (or until chocolate is hard). Slice and serve!
Step 4
These cereal bars are best kept chilled in the refrigerator for 4-5 days.

    • Thanks Maya! It took a little research, but it was pretty easy to put together once I got the basics down 😉

    • Hmmm the ingredients seem to be gluten free, but it’s not certified gluten free. I wonder why not? That would be great!
