Chocolate Peanut Butter Nice Cream Cake

 

Ok, so today’s post is super special for two reasons:

  1. I’m, like, seriously excited about this recipe. Chocolate and peanut butter. You know me, I’m obsessed, case closed.
  2. Tomorrow is my BIRTHDAY! Gahhh I’m turning 27 and I feel so. freaking. old. Did I really graduate from high school NINE years ago??Β WHERE HAS THE TIME GONE!

Ok, now that that whole getting old thing is out of the way, let’s talk CAKE! Because what better things are there to talk about in this world??

None. Especially when it’s my birthday.

When it came to creating my birthday cake this year (which is a strange concept in itself), I knew I had to channel my inner child (since I’m getting so old and all) and break out an old favorite from many years ago: ICE CREAM CAKE!

So back when I was a youngin’ in college, we had this insaneΒ homemade ice cream shop right near my campus called Dave & Andy’s. Their ice cream, as you can predict, was out-of-this-world amazing, but even better were their ice cream CAKES.

I don’t know how they did it, but their cakes were seriously like crack. You could pick any flavor of ice cream you wanted and they’d layer that on top of their baked-from-scratch-cake, all covered in this sweet, creamy icing. Now that I’m reminiscing about these cakes I’m beyonnnddd craving one right now. Delivery from Pittsburgh please???

Anyways, whenever any one of my friends would have a birthday, we’d order one of these epic ice cream cakes to start off our celebration and it was pure magic. I swear I’d eat my weight in ice cream cakeΒ every time a birthday came around. So you see, this love of ice cream cake goes WAY DEEP.

Now as much as I still love ice cream cake today, I thought I’d step out of the box and mesh it together with one of my NEW(er) loves: nice cream!Β I mean, who doesn’t love nice cream nowadays? So easy to throw together, creamy, perfectly sweet, and surprisingly healthy— there literally are NO downsides.

So, yes, I decided to make a Chocolate Peanut Butter Nice Cream Cake and it is perfect. Frozen bananas blended with peanut butter and vanilla, then mixed with chopped dark chocolate peanut butter cups. Ohh and it’s all topped off with a thick layer of dark chocolate and studded with even MORE peanut butter cups. Because, remember, it’s my birthday πŸ˜‰

I seriously couldn’t be happier.

Chocolate Peanut Butter Nice Cream Cake

Serves 6-8
Prep time 3 hours, 20 minutes
Dietary Gluten Free, Vegan, Vegetarian
Meal type Dessert

Ingredients

  • 4 bananas, frozen
  • 4 tablespoons PB2 (powdered peanut butter), regular peanut butter will work too
  • 1/3-1/2 cup milk of choice
  • 1 teaspoon vanilla extract
  • 10 small dark chocolate peanut butter cups, quartered (divided)
  • 3/4 cups dark chocolate chips, melted

Directions

Step 1
Line a 8x4 loaf pan with parchment paper. In a food processor or high speed blender, blend 4 frozen bananas with 1/3 cup of milk, vanilla, and PB2. Stop and scrape, then repeat until smooth. Add another splash of milk if needed.
Step 2
Fold in 5 quartered dark chocolate peanut butter cups, then pour the batter into the parchment lined loaf pan. Freeze for at least 3 hours. Once the cake is frozen, remove from the pan using the parchment paper and place on serving plate.
Step 3
Melt your dark chocolate chips and then pour them over the nice cream cake. Top the with remaining quartered peanut butter cups. Slice and serve! If the cake is still super frozen, let it sit out for 10-15 minutes before slicing (just to make it a little easier on you).
