Lemony Snap Pea & Hummus Crostini


So if you haven’t noticed, I’ve had a little obsession with all things TOAST lately… especially my recent Soy Glazed Mushroom Toast with Poached Egg. Mmmm I could eat that stuff ALL DAY! Heck, I could eat basically any kind of toast all day and be totally satisfied.

My toast obsession isn’t a recent occurrence either. I can distinctly remember coming home from school, way back in the day, and popping a few pieces of my favorite Italian bread in the toaster (which only my dad would buy, so we secretly loved when he went to the grocery store). Then I load them up with my favorite toppings: peanut butter (figures) or butter and cinnamon sugar (man, that cinnamon toast was my JAM) and munching away as I caught up on reruns of Full House and Boy Meets World. Those were the days, toast and 90s tv shows!

So, obviously, my toast obsession has not faded as I’ve grown up. Instead, I just crave soft, crusty loaves of hearty whole grain, tangy sourdough, or rosemary olive oil bread that I can fancy up for a snack or lunch. And today we’re going RUL fancy! Lemony Snap Pea & Hummus Crostini— now that’s my kind of fresh, spring toast!

Best of all, this toast totally looks way more difficult to throw together than it actually is. Basically you just steam some fresh sugar snap peas, toss with some lemon juice and olive oil (and S&P), then sprinkle on some fresh herbs and sesame seeds for crunch. Viola! Beautiful, fresh, healthy, hearty, adult-style toast!

Another option for this toast is using a thinner baguette instead of a larger loaf and making “appetizer” style crostini. These beauties would look gorgeous on a hors d’oeuvre table at a summer barbecue or party! Just a thought 😉

Lemony Snap Pea & Hummus Crostini

Serves 4-6
Prep time 10 minutes
Cook time 10 minutes
Total time 20 minutes


  • 2 cups sugar snap peas
  • juice of half a lemon
  • 1 tablespoon extra virgin olive oil
  • 1 heaped tablespoon fresh dill, chopped
  • 1 teaspoon sesame seeds (I used black and white)
  • hummus of choice (I used original)
  • bread of choice (I used sourdough)


Step 1
Steam sugar snap peas for 5 minutes, or until just tender, then drain and rinse in cold water to stop cooking. Use your fingers to peel snap peas in half, revealing the peas inside. Place in a large bowl and toss with olive oil, lemon juice, salt, pepper, and dill.
Step 2
Toast bread in a toaster oven or preheated oven (I set mine to 325 degrees F) for 5-6 minutes. Spread toast with a thick layer of hummus, then top with a generous helping of sugar snap peas. Sprinkle with more fresh dill and sesame seeds.
