This Friday 4.22.16


Happy {almost} weekend people!! This week strangely flew by quickly— probably because I just got back from my trip Monday afternoon— but I’ll take it, no complaints!

After this week we’re officially at 7 weeks left of school before summer vaca (whoop, whoop), which also means it’s crunch time before testing season begins (aka the busiest time of the year for teachers). I’m gearing up for a busy month ahead— keep the coffee flowing!

I’m keeping it short and sweet today, so let’s just get onto the good stuff: the food! Have a wonderful weekend everyone and I’ll be seeing you on Monday with the most comforting veggie casserole (can’t freakin’ wait). Here are my favorite recipes and links from the week, as always!

  1. this roasted balsamic carrot hummus. so rustic, with that perfect pop of sweetness. love it every time.
  2. this vegan banana chocolate chunk ice cream. we’ve been making nice cream like it’s our job this week and this is a total winner!
  3. this roasted tomato basil pesto. i made a big batch for my sister before i left philly and had to stop myself from spoon feeding it!
  4. these quick and easy curly fries. i’m pretty sure we eat these every week, but i have absolutely no regrets
  5. these simple veggie rice bowls. they’ve totally gotten me through this busy week.


…5 things i’m loving this week…

  1. weekend getaways! last weekend i spent three days in philly visiting my sisters and it was SO exciting, yet rejuvenating! i forgot how much i love going away for the weekend— getting a quick change of scenery and few days of fun can do wonders for your mental heath!
  2. nice cream. like i said above, we’ve been ALL about this banana ice cream after dinner this week. have you seen my homemade blizzards made out of this addicting stuff?? DO IT!
  3. we just started this new show called the night manager— anyone else started it? it stars tom hiddleston and the actor from “house” (it’s the only thing i know him from haha) and it’s strangely fantastic!
  4. i’m listening to when breath becomes air in my car during my daily commutes to work and it’s SUCH an intriguing book. love it so far and totally recommend.
  5. i’m finally getting the hang of snapchat (i think)! follow me @pumpkinandpb as i try and figure out what all the youngins have been up to 😉

  1. these fluffy gluten free biscuits. i’m officially in love with this recipe. can’t wait to try asap!
  2. this roasted ratatouille pasta salad. one of my favorite dishes ever, in PASTA form. can’t get much better than that.
  3. these roasted yukon potato spring vegetable bowls. i can never get enough of my veggie bowls and i’m loving this combo!
  4. this broccoli and orange miso pasta. i’m always looking for new recipes with miso. can’t wait to give this a try!
  5. this shaved asparagus, arugula quinoa salad with lemon-dijon poppy seed dressing. need i say more? how gorgeous is that watermelon radish— need to try that soon!

    • Oh course Sophie! Can’t wait to try it!! I just picked up a ridiculous amount of bananas last night because, shockingly, I was out in my freezer. Needed to fix that problem stat!
