Pineapple Mango Green Smoothie

Happy {early} St. Patrick’s Day!!

We’re celebrating a bit early today with this simple, clean Pineapple Mango Green Smoothie! Since our weather has been SO beautiful lately, I’ve been craving ALL the fresh fruit— which makes it difficult since so much of it is not in season yet. Boo.

That’s where frozen fruit comes to the rescue— and ultimately this smoothie. Chunks of frozen pineapple, mango, and banana, blended with spinach, milk, and chia seeds for a little green perfection. Mmmmm Happy St. Patrick’s Day indeed!

SO what are your plans for the big day tomorrow?? Lots of green food, green clothes, green beer?? I’ll take all of the above, except I’ll take a green-free beer please. I learned long ago that that festive beer… well… it’s just doesn’t come out right, if ya know what I mean 😉

My day probably won’t be quite as eventful as previous years, with it being a school day and all, but I promise you it will still be SO fun! Instead, I’ll be planting green “footprints” around my classroom, spreading green glitter across the floor, tipping over all the chair and anchor charts, and sneaking some green food coloring in my classroom toilet (yes, I do it every year, and yes, my students go CRAZY when they see it hehe). If you haven’t guessed it, a tricky leprechaun will be coming to visit— which means my kiddos will be plotting all day on how to catch it and if they “really saw him this time”! It’s hilarious watching their reactions every time they find one of his tracks or suddenly “see” him run by the window! Ahhh to be a kid again…

Anyways, back to this smoothie! So if your weather is as beautiful as it is here in North Carolina, or it’s freezing cold and you just don’t care, celebrate tomorrow with this naturally colored festive smoothie! It’s loaded with those luscious tropical flavors that’ll remind you that summer is right around the corner (or so I like to tell myself), not to mention all those fiber-packed greens. Definitely the healthiest way to start your St. Patty’s Day…. and it makes it totally ok to celebrate with an extra beer 😉

Have a wonderful Wednesday and I’ll see ya’ll again on Friday!

Hi, I’m Liz and this is my food blog where I share my love of healthy foods and whole ingredients. You will find mostly vegetarian dishes, plenty of sweets, and lots of love from this little kitchen in Durham, North Carolina!

  1. YUM!! this looks amazing! Happy St. Patty’s day babe! And ohhhh my gosh, I always crave fresh fruit, but I only crave smoothies when it’s warm! Is that weird? I just feel so cold if I drink them in the winter. SO excited for smoothie season! I definitely need to make this baby! Green, delicious and nutritious! <3
    xoxo Cailee!

    • You too girl!! I totally understand only wanting to drink smoothies in warm weather— I’m the EXACT same way! Fortunately, it’s been in the 80s here for the past 2 weeks so I’ve been ALL about those smoothies 🙂 Hope it warms up for you soon!!

  2. Yum yum yum! I love mango and pineapple together…it reminds me how much I’m craving summer! And those mason jar cups…I’m OBSESSED. Where did you find them?!

    • Right?!? I actually got them when we were visiting Charleston in December at this artisan market. I saw them and I just HAD to have them!!

  3. Oh my gosh, St. Patrick’s Day in your classroom sounds like so much fun! And this smoothie sounds seriously good. Love those tropical summer flavors!

    • Thanks Lucia! It was quite an exciting day for those kiddos 😉
