Friday Five 3.4.16

Happy Fridayyyyy! We’ve been getting those little glimpses of spring this week here in NC and it’s been absolutely magical. I’m totally that kind of person who’s mood changes with the weather and it’s like a cloud of unicorns and daisies comes over me when it’s sunny 😉 If only that were the case… but really, life is so so good when it’s beautiful outside!

How has your week been?? I just realized that I never ask that question in my Friday posts— I’m too busy focusing on the weekend ahead. Sometimes it’s kind of nice to look back on the week and see all that got accomplished in those 5 short days. It’s been quite an eclectic week for me. I had an eventful week at school (as always) celebrating Dr. Seuss’s birthday with my kiddos, I did some soothing yoga with my girl adriene (my yoga practice is still going strong), and, most exciting of all, I was on the jury of a mock murder case for my fiancé’s law final (it felt like my days of obsessing over serial and making a murderer all over again!). How about you???

… 5 recipes i made this week…

  1. i made another batch of these toasted coconut dark chocolate cookies and i’m officially obsessed
  2. this mediterranean quinoa salad. super fresh and full of flavor!
  3. this creamy garlic and leek autumn pasta, but i substituted roasted cauliflower in place of squash. delish!
  4. these cornmeal crusted fish tacos with cabbage slaw, except i baked them instead of frying. definitely a new favorite!
  5. these quick and easy curly fries (again). yeah, i’m addicted.


…5 things i’m loving this week…

  1. to all my fellow harry potter fans, the full cast of the new “harry potter” has been released! it’s really happening!! now… time to plan a spontaneous trip to london? i think yes.
  2. this purple cauliflower from trader joe’s. they have orange and green ones too— i think i know what i’m buying this weekend 😉
  3. this post on how to make a sushi burrito. have you tried one yet??? i’ve been dyyyyyinggggg to.
  4. 17 life changing ways to eat tacos for breakfast. yes, just, yes.
  5. jessica’s post on how to make an oatmeal latte. AND she continues to out-do herself!

  1. these vegan french dip sandwiches. i’ve been wanting to try a vegetarian version of a french dip for quite a while— so now I MUST!
  2. these peanut butter swirl black bean brownies. hello, weekend!
  3. this very veggie vegan pizza. it’s friday. i had to.
  4. these whole wheat shells & roasted cauliflower. i’m down for just about anything with roasted cauliflower.
  5. these classic chocolate cupcakes with chocolate buttercream. i’m getting into easter recipe mode just looking at them!
