Friday Favorites: Cinco de Mayo Style

Happy Friday! And this Friday is especially happy because it’s my boyfriend’s last day of his first year of law school <— Insert party emojis here 🙂 I don’t know who’s more excited, me or him. And what better way to celebrate than with some amazing Cinco de Mayo recipes?!

Now, I’m still obsessing over these Vegan Burrito Bowl Enchiladas from Wednesday, but I’m definitely eyeing up all a few of the dishes below. Not that I have any big plans for cinco or anything, seeing that it’s a work day and all. Does anyone else agree it should become a school holiday? No? Oh well, at least there will be delicious food involved. Do you have any exciting plans for May 5 (or this weekend)?

wouldn’t you guess, I love the idea of this mexican bruschetta

avocado salsa— best. thing. ever.

this quinoa black bean avocado salad with cilantro lime vinaigrette looks so healthy

I’ll take a bowl full of this spicy mexican slaw with lime and cilantro

here’s an old favorite that always seems to make an appearance: vegan 7 layer dip

oh, and one rule: you must smother this creamy cilantro lime dressing on EVERYTHING

 

{mains— or should I say, tacos and burrito bowlish things}

easy vegan sweet chili mustard quesadillas. yes please!

these grilled fish tacos with cabbage slaw are my jam

you must try these stuffed avocados with black bean cilantro rice

sweet potato pecan tacos— I think someone was reading my mind

how cool are these bbq cauliflower & chickpea tacos with a creamy lime slaw?!

I’m totally categorizing these roasted veggie pitas with avocado dip as Mexican

still one of my favorite things to make: spicy roasted potato burrito bowls

how comforting do these lentil tacos look? I swear that could be meat in there…

I’m loving these honey lime sweet potato, black bean, & corn tacos

 

{drinks—aka margaritas}

mango jalapeno margaritas. I don’t think I need to say anything more

but wait, there’s also these chili lime mango margaritas. basically just pick your spicy poison.

I want to grab this frozen coconut pineapple margarita right off the screen

somebody needs to make me this spicy cucumber margarita. please.

you can’t get much better than a fresh strawberry margarita

this margarita sangria is intriguing me…

these ginger cilantro margaritas look crazy delicious

for those of you feeling classy: a champagne margarita. people think of everything!

now this is just too cool: creamy margarita popsicles
