Friday Favorites

Happy Friday! I’m finally back into the swing of things here on pumpkin & peanut butter and have had SO much fun designing my “new” blog this week. To top that off, I got to spend most of the weekend/week with a undeniably adorable puppy (we were dog sitting) AND the weather has been warmer than ever here in NC! Puppies and warm weather— I don’t think it could get much better than that! But still, I’m ready for Friday and ready for my first lazy weekend in weeks. It’s definitely been a very busy couple months of 2015, so I’ll take a little down time to catch up on life— and maybe relax a little. Here are some favorites from the past TWO weeks!

 

what a perfect nourishing salad— this rainbow power kale salad with peanut dijon dressing

I’m totally craving these baked latkes with beet and avocado salad

this quinoa kale bowl with mushrooms & asparagus looks so healthy and delicious

all the things in this avo glow bowl make me happy

I’ll take one of these sweet potato, butternut squash, & pinto bean tacos right about now, please

you must check out these vegan shepherd’s pie potato skins. I know, they’re amazing.

lemony pesto pasta with edamame and almonds— yes, please!

or maybe this pasta with creamy kale sauce. both look addicting.

love the idea of this balsamic pesto and hummus sandwich

I made a version of this smashed chickpea, avocado, and pesto sandwich and, let me tell you, it was incredible.

these gluten free flourless black bean brownie muffins look like an amazing snack

half and half cookies: peanut butter brownie. what?!? yes.

definitely making this espresso chocolate coffee cake asap
