Start by washing your potato and attaching it to your spiralizer. Crank that knob and let the curls fall out! Oh, and preheat your oven to 400 degrees ๐Ÿ™‚

Once you’ve finished spiraling, pour 1 tbsp of olive oil (I used Wegman’s Basting Oil) and a pinch of salt and pepper into the bowl. Toss with your hands to coat all of the potato curls, then spread fries out onto a nonstick baking sheet. Try to spread them out so that they are barely touching. Bake for 15-20 minutes, tossing halfway through the cook time. The fries are done when they are golden brown and just slightly crispy.

A few nutritional facts about potatoes (because they sometimes get a bad rep):

  • They have even more potassium than a banana, especially with the skin still on (like these)
  • Potatoes are an excellent source of Vitamin C and B6
  • One medium potato contains 2 grams of fiber, which is 8% of your daily value
  • Potatoes are packed with iron!

  1. I just borrowed a spiralizer from a friend and made rutabaga “pasta” which was delicious. It’s on my blog if you’re interested. Your recipe looks amazing. I’ve since returned the spiralizer but I think I’m buying my own.

    • That’s so funny, because my spiralizer is a borrowed one too! I’m definitely going to have to buy my own as soon as I return it. They’re amazing!
