Valentine’s Day Round Up

I have been blown away by the amount of vegan and vegetarian Valentine’s Day recipes I’ve seen this week! Not only do they look insanely delicious, but so many of them include such nutritious ingredients. I think that’s a double win for Valentine’s Day. 

I secretly LOVE Valentine’s Day. I know it’s not the most celebrated holiday, and a lot of people look down on it for all the commercialism and such, but I think it’s so important to have a day where you shower the ones you love with extra, well, love! Nate and I love celebrating V-day and we usually use it as an excuse to do something different that we’ve had on our list for a while. Last year, we flew to NYC for Valentine’s day weekend and did a vegan food tour of all the amazing restaurants we’d been wanting to try. It may have been a blizzard that weekend, but we still had such an lovely time and our bellies left very happy! This year, Nate and I have reservations at this incredible vegetarian restaurant in Raleigh called Fiction Kitchen. They’re having a pre-fix menu with a whole bunch of courses and wine pairings— which is basically a perfect night in my book!

IMG_0994 IMG_0992 Valentine’s Day has always brought about special memories for me, not just during the times when Nate and I have been together. Back when I was little, I distinctly remember my dad coming home from work with roses and cards for all of his girls (and he just happened to have three daughters). My five-year-old self felt like the most special girl in the world when I saw him walk through the door, gifts in hand!

There were also those years back in my single days when I loved spending Valentine’s Day out with my girlfriends, treating ourselves to a night on the town. One year, while I was living in London, we planned an entire Valentine’s Day extravaganza with my 7 roommates (yes, you read that right, 7 roommates) full of Hummingbird Cupcakes, delicious food, and music and dancing at one of our favorite spots. It has to be one of the most memorable Valentine’s Days of my life just being with all the people I called family over there.
