Sweet Potato & Avocado Sandwich

Roasted Sweet Potato & Avocado Sandwich {vegan, gluten-free option}

  • 1 large sweet potato
  • 1 tbsp extra virgin olive oil
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ½ tsp cumin
  • 2 small tomatoes, sliced
  • 1 avocado, sliced
  • 4 tbsp hummus (I used roasted garlic)
  • 4 slices of bread (I used sprouted grain, use gluten free if preferred)


Step 1
Preheat oven to 400 degrees. Slice large sweet potato into ¼ inch strips (I left the skin on). Toss sweet potato slices in olive oil and spices, then bake for 20 minutes. Flip half ways through cook time.
Step 2
In the meantime, toast bread and slice avocado and tomato. Once the sweet potatoes are baked, pull them out of the oven. Let start layering! First spread 2 tbsp of hummus on 2 slices of bread. This will be the bottom of each sandwich. Top those 2 slices with ½ of an avocado each. Layer 3 slices of sweet potato on top of the avocado, then add a few tomato slices. Add your top layer of bread, slice it in half, and dig in!
